Categories     Chicken Breast

Yield 4 serving(s)

Number Of Ingredients 9

4 chicken breasts
3 cloves garlic, finely minced
1/3 cup lemon juice
1/3 cup olive oil
salt & pepper
3 tablespoons fresh oregano (fresh preferred) or 1 tablespoon dry oregano leaves
6 tablespoons butter, melted
1/3 cup lemon juice
3 tablespoons fresh oregano or 1 tablespoon dry oregano leaves (fresh preferred)

Steps:

  • Several hours before serving or the day before (if time allows), rub the chicken pieces pieces with the garlic and place them in a deep china or earthenware bowl.
  • Combine lemon juice, olive oil, salt and pepper to taste, and oregano and pour over chicken.
  • Cover the bowl and refrigerate the chicken for 1 hour, turning chicken pieces occasionally.
  • When ready to cook, preheat the broiler to its highest setting. Remove chicken from marinade; discard marinade.
  • Combine the melted butter, 1/3 cup lemon juice, and remaining oregano to make basting mixture.
  • Arrange the chicken pieces on the broiler rack and baste with a little of the melted butter mixture. Reserve part of the basting mixture to serve over the chicken when served.
  • Broil the chicken 3-4 inches from the heat for 5 to 8 minutes per side, basting often.
  • Chicken is done when juices run clear when pierced with a sharp knife.
  • Remove to serving platter, pour reserved basting mixture over the chicken breasts and serve immediately.
  • This is also good done on a BBQ.

Tips:

  • Use a whole chicken: This will give you more flavorful and juicy meat than using chicken parts.
  • Brine the chicken: Brining helps to keep the chicken moist and tender. You can brine the chicken in a simple salt and water solution, or you can add herbs and spices to the brine for extra flavor.
  • Use a hot oven: Broiling the chicken at a high temperature will help to create a crispy skin and juicy meat.
  • Watch the chicken closely: Broiling can cook the chicken quickly, so it's important to keep an eye on it to prevent it from overcooking.
  • Let the chicken rest: After broiling, let the chicken rest for a few minutes before carving. This will help the juices to redistribute throughout the meat.

Conclusion:

Cecily Brownstone's Broiled Chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken is brined and then broiled at a high temperature, which results in a crispy skin and juicy meat. The chicken can be served with a variety of sides, such as roasted vegetables, mashed potatoes, or rice.
