Steps:
- Bring a large pot of water to a boil. Add 2 tablespoons salt and the red potatoes. Return to a boil. Reduce heat, and simmer until just tender, about 7 minutes. Remove potatoes using a slotted spoon. Return water to a boil. Add sweet potatoes, and simmer until just tender, 4 to 7 minutes. Drain. Gently toss red and sweet potatoes with oil and rosemary; season with salt and pepper. Refrigerate for 1 hour.
- Heat grill to medium-high. Gently toss potatoes, and transfer to grill; reserve bowl with oil. Grill potatoes, turning occasionally, until charred and heated through, 6 to 7 minutes. Brush potatoes with oil from bowl.
Tips:
- Choose the right potatoes: For this recipe, small, firm potatoes like baby potatoes or fingerling potatoes work best. They will hold their shape well on the grill and cook evenly.
- Parboil the potatoes: Parboiling the potatoes before grilling helps them cook evenly and prevents them from burning. Simply place the potatoes in a pot of cold water, bring to a boil, and then reduce the heat to medium-low. Simmer for 5-7 minutes, or until the potatoes are tender but still firm.
- Season the potatoes well: Be generous with the cayenne pepper, rosemary, and salt. The potatoes should be well-seasoned so that they have plenty of flavor.
- Grill the potatoes over medium heat: Medium heat will help the potatoes cook evenly without burning. If the heat is too high, the potatoes will burn on the outside before they are cooked through.
- Serve the potatoes immediately: Grilled potatoes are best served hot off the grill. They can be served as a side dish or as a main course.
Conclusion:
Cayenne and rosemary potatoes are a delicious and easy-to-make grilled side dish. They are perfect for summer cookouts and picnics. The potatoes are crispy on the outside and tender on the inside, with a flavorful cayenne and rosemary crust. Serve them with your favorite grilled meats or vegetables for a complete meal.
