Time 1h

Number Of Ingredients 16

1 small head cauliflower
1 teaspoon coriander
1 teaspoon cumin
½ teaspoon cinnamon
½ teaspoon turmeric
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil (divided)
1 large onion (chopped)
1 cup diced carrot
3 garlic cloves (minced)
2 teaspoons grated fresh ginger
1 15 ounce can diced tomatoes
4 cups low-sodium vegetable broth
3 cups diced peeled sweet potatoes
1 15 ounce can coconut milk

Steps:

  • Preheat oven to 450°F. Line a rimmed baking sheet with parchment paper.
  • Combine coriander, cumin, cinnamon, turmeric, salt and pepper in a large bowl. Add the cauliflower to the spices along with 1 tablespoon oil and toss to combine. Transfer the cauliflower to the prepared baking sheet and roast until the edges are browned, 15 to 20 minutes. Set aside.
  • Meanwhile, heat the remaining 1 tablespoon oil in a large pot over medium-high heat. Add onions and carrots and cook until the onions soften, about 3 to 4 minutes. Add the garlic and ginger and cook until fragrant, about 1 more minute.
  • Stir in diced tomato tomatoes, vegetable broth and sweet potatoes. Cover and bring to a boil over high heat. Reduce heat to maintain a gentle simmer and cook, partially covered and stirring occasionally, until the vegetables are tender, about 35 to 40 minutes.
  • Stir in coconut milk and the roasted cauliflower. Blend with an immersion blender until smooth and consistent.
  • Serve warm with roasted chickpeas, if desired.

CAULIFLOWER SOUP

Cauliflower Soup image

Provided by Ree Drummond : Food Network

Time 1h15m

Yield 10 to 12 servings

Number Of Ingredients 14

1 stick butter
1/2 onion, finely diced
1 carrot, finely diced
1 celery stalk, finely diced
1 cauliflower head, cored and roughly chopped
2 tablespoons finely minced fresh parsley
8 cups low-sodium chicken broth or stock
6 tablespoons all-purpose flour
2 cups whole milk
1 cup half-and-half
1 to 2 teaspoons salt (or to taste)
Ground black pepper
1 heaping cup sour cream, at room temperature
Warm rolls or crusty bread, for serving

Steps:

  • Melt 1/2stick of the butter in a heavy pot over medium heat. Then add the onions and cook until translucent, about 3 minutes. Add the carrots and celery, and then stir and cook for a couple more minutes. Throw in the cauliflower. Then stir it around, cover and cook over very low heat for 15 minutes.
  • Add the parsley, and then add the chicken broth and simmer for 10 minutes.
  • Meantime, make a simple white sauce: Melt the remaining 1/2stick butter in a medium saucepan over medium heat. Then whisk in the flour. Cook for a couple of minutes, and then pour in the milk, whisking to combine. Remove the white sauce from the heat and pour in the half-and-half. Then pour this creamy mixture into the pot. Add 1 teaspoon salt and pepper to taste, and allow the soup to simmer for another 20 to 30 minutes. The soup will thicken slightly but shouldn't be overly thick. Give it a taste and add more salt if needed.
  • Now, this is the fun part: To serve the soup, place the room temperature sour cream in the bottom of a soup tureen (a very large serving bowl). Then add the whole pot of hot soup to the tureen.
  • Stir gently to combine, and then serve immediately with warm rolls and an appetite for something wonderful.
  • You will love everything about this.

Tips:

  • Choose the right vegetables: Use fresh, high-quality vegetables for the best flavor and texture. Look for cauliflower with tight florets, zucchini that is firm and not too large, and sweet potatoes that are smooth and free of blemishes.
  • Don't overcrowd the pot: When cooking the vegetables, be sure to give them enough space so that they can cook evenly. If the pot is too crowded, the vegetables will steam instead of roast and will not have as much flavor.
  • Roast the vegetables until they are tender: The roasting process brings out the natural sweetness of the vegetables and gives them a slightly caramelized flavor. Roast the vegetables until they are tender but still have a bit of a bite to them.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth that has a lot of flavor. You can use chicken broth, vegetable broth, or even a combination of the two.
  • Season the soup to taste: Once the soup is pureed, taste it and adjust the seasonings as needed. Add more salt, pepper, or herbs until the soup is flavorful and balanced.

Conclusion:

This cauliflower soup with zucchini and sweet potato is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. The soup is packed with nutrients and has a creamy, flavorful texture that is sure to please everyone at the table. So next time you're looking for a healthy and satisfying soup, give this cauliflower soup with zucchini and sweet potato a try. You won't be disappointed!
