MEXICAN CAULIFLOWER RICE
Properly prepared, cauliflower rice is chewy, nutty, and deliciously addictive. For best flavor and texture, make the rice from scratch using a fresh head of cauliflower. Cauliflower happily absorbs seasonings, so be generous - jalapeno, garlic, tomato paste, lime juice, and cilantro are each prominent but balanced in our Mexican cauliflower rice. This dish is both easy and flexible, make in one skillet, and ready in under 30 minutes.

Steps:
- Rice the cauliflower. Slice the florets from the head of the cauliflower. Fit a food processor with the s-blade. Place half the florets into the bowl of the food processor and pulse until riced, scraping down the sides once halfway through to catch any larger pieces. Scrape out the riced cauliflower and repeat with the remaining florets.
- Heat a skillet over medium high heat. Add the oil and heat until it shimmers. Add the onion and sautee until soft and translucent, stirring occasionally, 5-6 minutes.
- Add the garlic and jalapeno and sautee until fragrant, 1-2 minutes.
- Add the tomato paste, salt, cumin, and paprika and stir into the vegetables.
- Add the cauliflower rice and stir continuously until all ingredients are incorporated. Continue sautéing, stirring occasionally, until the cauliflower releases its liquid and is dry and fluffy.
- Remove the Mexican cauliflower rice from heat. Stir in the cilantro and lime juice. Serve immediately.

Steps:
- Preheat the oven to 425 degrees F. In 2 batches, break up the florets into a food processor and pulse until the mixture resembles couscous, 10 to 12 seconds. Spread the cauliflower out on a foil-lined, lightly oiled baking sheet and roast, stirring halfway through, until the cauliflower begins to soften and is golden in spots, about 15 minutes. Allow to cool 10 minutes, then transfer to a bowl.
- Heat 2 teaspoons peanut oil in a well-seasoned wok or large nonstick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs and swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool and cut into 1/2-inch pieces.
- Meanwhile, wipe out the pan with a paper towel and heat the remaining tablespoon peanut oil over high heat. Add the mushrooms, scallions and carrots and cook, stirring, 1 1/2 minutes. Add the garlic and ginger and cook, stirring, 1 minute more. Add the soy sauce, sesame oil, cauliflower and 1/2 teaspoon salt and cook, stirring often, for 2 to 3 minutes. Add the peas and reserved egg and cook, stirring, until heated through, 1 to 2 minutes. Top with the reserved scallions and serve immediately.

Tips:
- Use a large skillet or wok: This will help to ensure that the cauliflower rice cooks evenly and doesn't get soggy.
- Cook the cauliflower rice in batches: If you try to cook too much cauliflower rice at once, it will steam instead of fry and will become mushy.
- Don't overcrowd the skillet: Again, this will help to ensure that the cauliflower rice cooks evenly.
- Season the cauliflower rice liberally: Mexican fried rice is a flavorful dish, so don't be shy with the seasonings.
- Use fresh vegetables: Fresh vegetables will give your Mexican fried rice the best flavor and texture.
- Use a variety of vegetables: This will add color, flavor, and nutrients to your dish.
- Don't overcook the vegetables: You want them to be crisp-tender, not mushy.
- Add the eggs last: This will help to prevent them from overcooking and becoming rubbery.
- Serve immediately: Mexican fried rice is best served hot and fresh.
Conclusion:
Cauliflower Mexican fried rice is a delicious and healthy dish that's perfect for a quick and easy meal. It's also a great way to use up leftover cauliflower rice. So next time you're looking for a tasty and healthy meal, give this recipe a try!
