TWO CHEESE POTATO & CAULIFLOWER SOUP
I found this recipe before I decided to follow a lower fat diet, so I often reduce the cheese amount and it works just as well. I've also combined it with the Weight Watchers Baked Potato Soup #261058 for a nice lower fat recipe. I use broth when doing the baked potato version. Also adding roasted garlic is quite tasty. Can do the potatoes peeled or unpeeled. The cauliflower can be fresh or frozen.

Nutrition Facts :
Tips:
- Choose fresh cauliflower: Look for heads that are compact and white, with no signs of bruising or wilting. Fresh cauliflower will have a slightly sweet smell.
- Cut the cauliflower into small florets: This will help them cook evenly and quickly.
- Use a good quality cheese: A sharp cheddar or gruyère will give the soup a rich, flavorful taste.
- Don't overcook the soup: Once the cauliflower is tender and the cheese is melted, remove the soup from the heat. Overcooking will make the cauliflower mushy and the cheese tough.
- Serve the soup hot, garnished with fresh parsley or chives: This will add a pop of color and flavor to the soup.
Conclusion:
Cauliflower cheese soup is a delicious, comforting, and easy-to-make dish that is perfect for a cold winter day. It is also a great way to use up leftover cauliflower. This soup is sure to be a hit with your family and friends. You can also experiment with different cheeses and vegetables to create your own unique soup.
