3 cups bite-sized cauliflower florets
1 egg
½ tablespoon all-purpose flour
½ cup milk
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
1 pinch ground paprika

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.

1 tablespoon unsalted butter
1 large head cauliflower (about 2 pounds)
4 1/2 ounces Cheddar, grated and divided
1/2 cup homemade coarse bread crumbs
1 whole egg
1 teaspoon kosher salt
1 teaspoon dry mustard powder
1/2 teaspoon smoked paprika
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/2 cup heavy cream

Steps:

  • Grease an 11 by 7-inch flameproof baking dish with the butter and set aside.
  • Position 1 oven rack in the middle position and 1 in the top position and preheat the oven to 400 degrees F.
  • Place the cauliflower in a small glass bowl, stalk end up. Use a paring knife to remove the lower leaves. Trim the curds off of the stem, keeping them as intact as possible. Try to keep the size uniformly large and make as few cuts as possible. Discard the leaves and stem. Cover tightly with plastic wrap and microwave on high for 4 minutes. Rest, still covered in plastic, for another 4 minutes. Uncover and rest for 4 to 5 more minutes while preparing the rest of the dish.
  • Combine 4 ounces of the cheese, the bread crumbs, egg, salt, mustard, paprika, black pepper, and cayenne in a large mixing bowl. When 1 minute remains on the cauliflower rest period, microwave the cream on high for 30 seconds. Add the cream to the bowl with the cheese mixture and stir to combine.
  • Using your hands and a tea towel if the cauliflower is still hot, rub the large florets between your hands to break up the curds. Add the curds to the cream mixture and stir until the cheese is thoroughly melted and combined.
  • Spread the cauliflower mixture in the prepared baking dish, place on the middle rack, and bake for 20 minutes. Remove the baking dish and turn the broiler to high. Sprinkle the remaining 1/2 ounce cheese atop the cauliflower. Place on the top rack and broil until the top is bubbly and appropriately brown, 6 to 8 minutes. Rest 10 minutes before serving.

Using Recipe #106251 PLEASE PLEASE don't eat the roasted cauliflower before making the final dish. You may want to double the roasting part so you and anyone the inhales the aroma from the kitchen can munch on it, till the final product is done. roasted cauliflower. 1 large cauliflower (trimmed and cut into bite size pieces, washed with water still on)
16 garlic cloves, peeled
1 -2 teaspoon minced fresh rosemary (some people used Oregano)
1 teaspoon salt
1/4-1/2 teaspoon black pepper
1/4 cup olive oil
2 tablespoons butter, melted or 2 tablespoons smart balance butter
2 tablespoons all-purpose flour
2 cups warm milk, fat free
2 ounces shredded cheddar cheese, plus some to top

Steps:

  • Prepare Cauliflower:.
  • Mix oil, rosemary, salt, pepper and garlic together.
  • Toss in cauliflower and place in a large casserole dish in one layer.
  • Roast in a preheated oven at 450 degrees for 20 minutes; give a toss and bake for 10 more minutes.
  • Sauce:.
  • Place the butter and flour into a microwave safe glass container whisk to incorporate.
  • Whisk in the milk Continue stirring until the sauce is thickened about 3 minutes. If the sauce is very thick add a little more milk, the sauce should be thick but still runny. Add the grated cheese and stir until melted.
  • Place the florets in a greased 9 x 13 baking dish.
  • Pour the thickened cheese sauce over the cauliflower ensuring all the florets are covered. Sprinkle with grated cheese and a good twist of black pepper.
  • Bake in the hot oven until the sauce is bubbling and golden brown on the top, approx 30 minutes.

1 large cauliflower (leaves cut off), broken into pieces
500ml milk
4 tbsp flour
50g butter
100g strong cheddar, grated
2-3 tbsp breadcrumbs, if you have them

Steps:

  • Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
  • Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
  • Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.
  • Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
  • Turn off the heat, stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.
  • Put in the oven and bake for 20 mins until bubbling.
