There's no cream in it and only a teensy touch of butter, so it's good for anyone counting calories or carbs. It pleases the meat-and-potatoes eaters at my table, even though it contains neither.

Yield 8 serving

Number Of Ingredients 6

1 tablespoon olive oil
4 cups whole milk
1 teaspoon salt
1 tablespoon unsalted butter
1/2 bunch chives, minced for garnish

Steps:

Provided by Daniel Gritzer

Categories     Side Dish     Sides

Time 45m

Number Of Ingredients 7

2 tablespoons (30g) unsalted butter
1 large (8-ounce; 225g) yellow onion, thinly sliced
4 medium cloves garlic, thinly sliced
1 (2-pound; 925g) head cauliflower, trimmed and cut into florets
2 cups (475ml) heavy cream or homemade or store-bought low-sodium chicken stock (or a combination of the two; see note)
1 sprig thyme
Kosher salt

Steps:

  • In a large saucepan, melt butter over medium-high heat. Add onion and garlic and cook, stirring often, until softened and translucent, about 5 minutes; lower heat as necessary to prevent browning.
  • Add cauliflower, cream and/or stock, and thyme. Cover, bring to a simmer, and cook, adjusting heat to maintain simmer, until cauliflower is tender, 5 to 6 minutes. Uncover and continue to simmer, stirring occasionally, until liquid is reduced by about three-quarters, about 20 minutes. Discard thyme sprig.
  • Using a blender or immersion blender, blend cauliflower and liquid to form a very smooth purée. Season with salt. (You can adjust purée consistency as needed: Thicken by cooking down further while stirring often over low heat in a wide nonstick skillet, or thin by whisking in liquid, such as stock, cream, or water.) Serve warm.

2 to 3 tablespoons sour cream
1 tablespoon unsalted butter, softened
Coarse salt and freshly ground pepper

Nutrition Facts : Calories 148 g, Fat 9 g, Fiber 5 g, Protein 6 g

Tips:

  • Choose the right cauliflower. For the best flavor and texture, use a fresh, firm cauliflower head that is free of blemishes.
  • Prepare the cauliflower correctly. Remove the leaves and cut the cauliflower into small florets. Rinse the florets thoroughly under cold water.
  • Cook the cauliflower until tender. You can boil, steam, or roast the cauliflower. If boiling, bring a large pot of salted water to a boil and add the cauliflower florets. Cook for 5-7 minutes, or until tender. If steaming, place the cauliflower florets in a steamer basket over a pot of boiling water. Cover and steam for 5-7 minutes, or until tender. If roasting, preheat the oven to 400 degrees Fahrenheit. Toss the cauliflower florets with olive oil and salt and pepper. Spread the florets in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and slightly browned.
  • Choose the right apples. For a sweet and tangy flavor, use a variety of apples such as Honeycrisp, Granny Smith, or Pink Lady. You can also use a sweeter variety such as Fuji or Gala. Peel and core the apples and cut them into small pieces.
  • Cook the apples until soft. Add the apples to a saucepan with a little bit of water or apple cider. Bring to a simmer and cook for 5-7 minutes, or until the apples are soft.
  • Puree the cauliflower and apples. Once the cauliflower and apples are cooked, transfer them to a blender or food processor. Puree until smooth. You can add a little bit of milk or cream to make the puree more creamy.
  • Season the puree to taste. Add salt, pepper, and other seasonings to taste. You can also add a little bit of fresh herbs such as thyme or rosemary.

Conclusion:

Cauliflower and apple puree is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its creamy texture and sweet and tangy flavor, this puree is sure to be a hit with everyone at your table.
