1 head cauliflower, cut into florets
2 tablespoons olive oil
1 onion, finely diced
2 cloves garlic, minced
1 red, orange or yellow bell pepper, seeded and diced
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon kosher salt
One 15-ounce can black beans, drained and rinsed
1 cup salsa
1/4 cup chopped cilantro

Steps:

  • Working in batches, add the cauliflower to a food processor and pulse until the mixture resembles rice. Set aside.
  • Heat a large skillet over medium heat. Add the oil and cook the onion and garlic, stirring often, for 2 minutes. Add the bell pepper and cook, stirring often, for 1 minute.
