Number Of Ingredients 21

1/4 cup sliced toasted almonds
1 (3 1/2 pound) frying chicken, cut into 8 pieces
1 teaspoon salt
Freshly ground black pepper
All-purpose flour, for dredging
2 tablespoons vegetable oil
1 tablespoon butter
1/2 medium onion, diced
1 large yellow bell pepper, diced
2 cloves garlic, smashed
2 teaspoons curry powder
1 teaspoon fresh thyme leaves
Pinch cayenne
1 (15-ounce) can chopped tomatoes
1/4 cup dried currants
Cool Yogurt and Herb Sauce, recipe follows :
1 cup whole milk plain yogurt
1/4 cup fresh cilantro leaves, chopped
5 scallions, white and green parts finely chopped
1 tablespoon honey
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a skillet over medium-high heat and add the almonds and toast swirling the pan until golden. Remove almonds and set aside, reserve skillet.
  • Season the chicken all over with salt and pepper. Dredge the chicken in flour and shake off any excess. Heat the oil and butter in the skillet over medium high heat. Cook the chicken on both sides until golden brown, about 8 minutes. Transfer to a dish and set aside.
  • Add the onion, bell pepper, garlic, curry powder, thyme, and cayenne to the pan. Stir to loosen up the brown bits on the bottom of the pan. Cook until the vegetables are tender, about 5 minutes. Stir in the tomatoes and nestle the chicken pieces in the sauce, bring the sauce up to a simmer and then transfer to the oven and cook until the chicken is cooked through and tender, 20 to 25 minutes.
  • Remove skillet from the oven and transfer chicken to a serving dish. Spoon any oil off the surface of the sauce and discard. Bring the sauce to a simmer over medium heat, add the currants and simmer to thicken slightly. Season with salt and pepper, to taste. Spoon the sauce over the chicken and scatter the toasted almonds on top. Serve with a dollop of cool yogurt and herb sauce.
  • In a bowl combine the first 4 ingredients, season with salt and pepper, to taste.

Also see our step-by-step photo tutorial for making Chicken Fricassee. A fricassee is halfway between a saute and a stew. A true classic -- with as many variations as there are grandmothers in France -- it relies on humble ingredients and just a single pot. It's the original French comfort food: simmered chicken with hearty vegetables in a rich, silky sauce. And almost as satisfying as the dish itself is having our one-pot master recipe in your repertoire.

Time 1h15m

Number Of Ingredients 18

1 whole chicken (3 1/2 to 4 pounds), cut into 11 pieces (reserve back and wing tips for another use, such as stock)
Coarse salt and freshly ground pepper
3 tablespoons unsalted butter, softened, divided
1 tablespoon extra-virgin olive oil
1 small yellow onion, cut into 1/4-inch dice (1 cup)
1 carrot, cut into 1/4-inch dice (1/2 cup)
1 celery stalk, cut into 1/4-inch dice (1/3 cup)
8 ounces cremini mushrooms, trimmed and quartered
2 tablespoons all-purpose flour
2/3 cup dry white wine
4 cups chicken broth
2 sprigs fresh flat-leaf parsley
2 sprigs fresh thyme
1 bay leaf
2 large egg yolks, room temperature
1/4 cup heavy cream
2 to 3 tablespoons roughly chopped fresh tarragon leaves
2 tablespoons fresh lemon juice

Steps:

  • Brown ChickenSeason chicken on both sides with 1 tablespoon salt and 1/2 teaspoon pepper. Preheat a Dutch oven or other large heavy pot over medium-high heat. Add 2 tablespoons butter and the oil to pot. When butter melts and foam subsides, add half the chicken, skin side down, in a single layer; do not crowd pot. (If butter begins to blacken, lower heat.) Fry chicken, turning once, until golden brown on both sides, about 10 minutes total, and transfer to a plate. Repeat with remaining chicken.
  • Saute MirepoixReduce heat to medium, and add mirepoix (onion, carrot, and celery) to pot, scraping up any browned bits with a wooden spoon. Saute mirepoix, stirring occasionally, until soft and golden brown in places, 8 to 10 minutes.
  • Cook Mushrooms and FlourAdd mushrooms, and cook, stirring occasionally, until mushrooms darken, become glossy, and begin to release liquid, 4 to 5 minutes. Stir in flour, and cook until flour is absorbed by vegetables and is no longer visible, about 1 minute.
  • Pour in Wine and BrothAdd wine to pot, and bring to a boil, stirring until liquid just thickens, about 45 seconds. Add broth, and stir.
  • Simmer ChickenPlace chicken, skin side up, in a single layer on vegetables; pour juices that have accumulated on plate into pot. Tie parsley sprigs, thyme sprigs, and bay leaf together with kitchen twine; add to pot. Bring to a boil, then reduce to a simmer. Cover partially. Cook until internal temperature of thickest part of chicken registers 165 degrees, 25 to 30 minutes. Transfer chicken to a clean plate. Simmer liquid, uncovered, until reduced slightly, about 5 minutes. Discard herbs.
  • Make and Add LiaisonTo make the liaison (sauce thickener), whisk together egg yolks and cream in a medium bowl. Whisking constantly, pour 1/2 cup cooking liquid, 1 tablespoon at a time, into liaison to temper it. Stir tempered liaison into pot.
  • Finish with Tarragon, Lemon, and ButterReturn chicken to pot. Add tarragon, lemon juice, and the remaining butter. Bring to a simmer, stir gently to combine, and serve.

Categories     Dinner     Entree     Main

Number Of Ingredients 14

2 tablespoons salted butter
1 tablespoon extra virgin olive oil
4 chicken thighs (bone-in, skin on)
salt and pepper (to taste)
8 ounces white mushrooms (sliced)
2 shallots (minced)
3 sprigs thyme (or ½ teaspoon dried thyme)
½ cup parsley (roughly chopped)
1 tablespoon lemon juice
10 ½ ounces cream of mushroom soup (10.5 ounce can )
½ cup chicken stock
½ cup white wine
½ cup heavy cream
fresh parsley (optional garnish)

Steps:

  • Place the butter and extra virgin olive oil in a large skillet and heat over medium-low heat until butter has melted.
  • Season chicken thighs with salt and pepper and add the chicken, skin side down, and cook for 3-4 minutes on each side until well browned. The chicken will not be cooked through yet. It will finish cooking later.
  • Remove the chicken from the skillet to a plate and cover with aluminum foil. Set aside.
  • In the hot skillet, add the mushrooms, shallots and thyme and saute until the mushrooms just begin to brown, about 2 to 3 minutes. (If the pan is dry, add an additional tablespoon of butter and tablespoon of extra virgin olive oil first.)
  • Add in the parsley and cook for another 30 seconds to 1 minute.
  • Stir in the lemon juice, mushroom soup, chicken stock and white wine until combined.
  • Carefully place the chicken thighs back into the skillet, skin side up in the sauce, and bring everything to a simmer over medium or medium-low heat.
  • Cover the pan and simmer on medium-low heat for 20 to 30 minutes or until the chicken reaches 165°F in the center. If you don't have a meat thermometer, you can remove a piece of chicken and cut into the middle. If there is no pink and the juices run clear, it is done cooking.
  • Take the skillet off the heat and stir in the heavy cream and serve hot with a fresh parsley garnish if desired. Serve with mashed potatoes, rice or even pasta.

SKILLET CREOLE CHICKEN FRICASSEE

Skillet Creole Chicken Fricassee image

Published in Cook's Country magazine, Dec/Jan 2007. You can substitute chorizo or kielbasas for the andouille sausage. Serve over rice. Note: there are several good recipes posted on RecipeZaar for Creole seasoning.

Provided by swissms

Categories     Stew

Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

4 boneless skinless chicken breasts (about 1 1/2 pounds)
3 teaspoons creole seasoning
8 ounces andouille sausages, cut into 1/2-inch rounds
3 tablespoons vegetable oil
1 onion, chopped
3 celery ribs, sliced thin
1 red bell pepper, seeded and chopped
4 garlic cloves, minced
1/4 cup all-purpose flour
2 cups low sodium chicken broth

Steps:

  • Halve each chicken breast crosswise (or, depending on size, you may want to cut each into 3 pieces.) Pat chicken dry with paper towels and sprinkle with 2 teaspoons Creole seasoning.
  • Cook sausage in large nonstick skillet over medium-high heat until browned, about 5 minutes. Transfer sausage to paper towel-lined plate, leaving fat in skillet. Cook chicken in sausage fat until browned, about 2 minutes per side. Transfer to plate with sausage.
  • Add oil, onion, celery, and pepper to now-empty skillet and cook until lightly browned, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in flour and remaining teaspoon Creole seasoning and cook until four begins to brown, about 1 minute.
  • Slowly stir in broth until smooth. Return chicken and sausage to skillet. Cover and simmer until chicken registers 160°F, about 10 minutes. Serve over rice.

Tips:

  • Use a Dutch oven or large pot: This will allow you to brown the chicken and vegetables in one pot, making cleanup easier.
  • Don't overcrowd the pot: If you have too much chicken or vegetables in the pot, they won't brown properly. Cook the chicken and vegetables in batches if necessary.
  • Use a good quality chicken broth: The broth is the base of the fricassee, so it's important to use a good quality broth that has a lot of flavor.
  • Season the chicken and vegetables well: Don't be afraid to add salt, pepper, and other spices to taste. This will help to enhance the flavor of the fricassee.
  • Simmer the fricassee until the chicken is cooked through: This will take about 30 minutes, depending on the size of the chicken pieces.
  • Serve the fricassee over mashed potatoes, rice, or noodles: This will help to soak up the delicious sauce.

Conclusion:

Catskills-style chicken fricassee is a classic comfort food dish that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So next time you're looking for a hearty and delicious meal, give this recipe a try.
