Provided by shelbyrose

Categories     Catfish

Time 19m

Yield 4 serving(s)

Number Of Ingredients 10

1/2 cup chopped green onion
1 tablespoon vegetable oil
1/4 teaspoon ground ginger
1 teaspoon cornstarch
2 tablespoons water
1 cup chicken broth
1 tablespoon soy sauce
1 tablespoon white wine vinegar
1/8 teaspoon cayenne pepper
4 (6 ounce) catfish fillets

Steps:

  • In a 2-cup microwave-safe bowl, combine onion, oil and ginger.
  • Microwave, UNCOVERED, on high for 1 1-1/2 minutes or until onions are tender.
  • In a small bowl, combine cornstarch and water; blend until smooth.
  • Add in broth, soy sauce, vinegar and cayenne; mix well.
  • Stir into onion mixture.
  • Microwave, UNCOVERED, at 70% power for 3-4 minutes, stirring after each minute, until sauce comes to a boil.
  • Place catfish in a microwave-safe 3 quart dish.
  • Pour sauce over catfish.
  • COVER and microwave 5 1/2 to 7 minutes or until the fish flakes easily with a fork.

Tips:

  • Choose the right catfish: Look for catfish with firm, white flesh and no off-putting odor. Avoid catfish with dark spots or bruises.
  • Clean the catfish thoroughly: Rinse the catfish under cold water and pat it dry with paper towels. Use a sharp knife to remove the head, tail, and fins. Then, make a shallow incision along the belly and remove the entrails.
  • Marinate the catfish: Marinating the catfish in a mixture of ginger, garlic, soy sauce, and rice wine will help to tenderize the fish and infuse it with flavor.
  • Cook the catfish properly: The best way to cook catfish is to fry it in a hot skillet until it is cooked through. You can also bake or grill the catfish, but be sure to cook it to an internal temperature of 145 degrees Fahrenheit.
  • Serve the catfish with a flavorful sauce: A simple ginger sauce is a great way to serve catfish. You can also try a more complex sauce, such as a black bean sauce or a sweet and sour sauce.

Conclusion:

Catfish is a delicious and versatile fish that can be cooked in a variety of ways. Whether you are frying, baking, or grilling catfish, be sure to follow these tips to ensure that your dish turns out perfectly. With its mild flavor and firm texture, catfish is a great choice for a variety of recipes. So next time you are looking for a new fish to try, give catfish a try!
