SEAFOOD ENCHILADAS

Seafood Enchiladas image

These crab and shrimp stuffed enchiladas taste like the ones served at a popular Mexican restaurant in my area. My husband just loves them. After sprinkling the cheese over the enchiladas before baking, you can also garnish with tomatoes, cilantro, olive slices, or whatever other garnish you enjoy.

Tips:

  • Choose the Right Catfish: Opt for fresh or frozen catfish fillets that are firm and have a mild odor. Avoid fillets with a slimy texture or a strong fishy smell.
  • Season the Catfish Well: Enhance the flavor of the catfish by seasoning it with a blend of spices like paprika, cumin, chili powder, salt, and pepper. Marinate the fillets for at least 30 minutes to allow the flavors to penetrate.
  • Cook the Catfish Properly: For tender and flaky catfish, cook it gently over medium heat. Pan-frying, baking, or grilling are all suitable methods. Avoid overcooking, as this can result in dry and tough fish.
  • Make a flavorful Enchilada Sauce: The enchilada sauce is a crucial component of these enchiladas. Use a combination of canned tomatoes, tomato sauce, chili powder, cumin, oregano, and garlic to create a rich and flavorful sauce.
  • Assemble the Enchiladas: Layer the tortillas with catfish, cheese, and enchilada sauce. Roll them up tightly and place them in a baking dish. Top with additional sauce and cheese, then bake until the cheese is melted and bubbly.
  • Serve with Desired Toppings: Once the enchiladas are baked, serve them hot with your favorite toppings. Options include sour cream, guacamole, salsa, chopped cilantro, and sliced avocado.
