For the plain version:
1 tablespoon olive oil
1 tablespoon unsalted butter
1 [3-4-pound (1.6-1.8-kg)] chicken, cut into 8 pieces, or 2-3 pounds (1.2-1.4 kg) chicken parts, patted dry
Salt and pepper
1 yellow onion, chopped
1 1/2 cups (275 g) long-grain white rice, rinsed
1 bay leaf
3 cups (720 ml) low-sodium chicken broth or water
1 cup (135 g) frozen peas (optional)
Handful of fresh flat-leaf parsley, roughly chopped (optional)
For the dirty version:
1 tablespoon olive oil
1 tablespoon unsalted butter
1 [3-4-pound (1.6-1.8-kg)] chicken, cut into 8 pieces, or 2-3 pounds (1.2-1.4 kg) chicken parts, patted dry
Salt and pepper
1/2 pound (225 g) mild pork sausages, casings removed or 1/4 pound (115 g) mild pork sausages, casings removed, plus 1/4 pound (115 g) chicken livers, roughly chopped
1/2 yellow onion, chopped
1 small bell pepper (any color), diced
2 celery stalks, chopped
1 garlic clove, minced
1/4 teaspoon cayenne pepper
1 1/2 cups (275 g) long-grain white rice, rinsed
1 bay leaf
3 cups (720 ml) low-sodium chicken broth or water
Handful of sliced scallions (optional)

Steps:

  • In a large skillet or high-sided sauté pan with a lid, heat the oil and butter over medium-high heat until the foam from the butter begins to subside. Season the chicken generously with salt and pepper, then put it in the pan skin-side down. Cook-resisting the urge to repeatedly poke, prod, and look underneath-until it doesn't stick to the pan and is golden brown, about 6 minutes.
  • Flip the chicken over and cook for 5 minutes more. Transfer to a platter, then pour off all but about 2 tablespoons of the fat from the pan. Add the sausages and livers (if using) and cook over medium-high heat, stirring often and breaking up the meat, until browned, about 3 minutes. Reduce the heat to medium and add the onions and, if using, the peppers, celery, garlic, and cayenne. Cook, stirring occasionally, until the onions are softened, about 8 minutes. Add the rice and bay leaf and cook, stirring often, until the rice is lightly toasted, about 2 minutes.*
  • Add the broth, stir to combine, then add the reserved chicken, skin-side up, and any accumulated juices. Bring to a boil, then reduce the heat and simmer, covered, until the chicken is just cooked through and the rice is tender, about 20 minutes (see Tip). Let the pan sit, covered, for 5 to 10 minutes after taking it off the heat. Taste the rice and stir in a little more salt and/or pepper, if needed, then sprinkle with parsley or scallions, if you like.
  • Make Ahead
  • Prepare up to * and refrigerate, covered, for up to 1 day. Let sit at room temperature for about 20 minutes before continuing with the recipe. You may need to add a few minutes to the cooking time.
  • Staggered
  • Serve hot or warm. It will keep, covered, in a 200°F (90°C) oven, for about 1 hour.

3 cups chicken broth
1 cup long-grain white rice
2 cloves garlic, minced
1 bay leaf
1 small bundle thyme, tied with twine
1 tablespoon olive oil
1 rib celery, diced
1/2 onion, diced
1/2 green bell pepper, diced
1 pint chicken livers and hearts, cleaned, diced small
8 ounces andouille sausage, casings removed, crumbled
1 ear corn, shucked, kernels removed
One 15.5-ounce can kidney beans, drained
2 teaspoons garlic powder
2 teaspoons paprika
1 teaspoon cayenne
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon red pepper flakes
Salt
2 scallions, thinly sliced on the bias
2 tablespoons olive oil
2 airline chicken breasts
Kosher salt
2 tablespoons unsalted butter
1 tablespoon Worcestershire sauce
8 ounces green beans, trimmed

Steps:

  • For the dirty rice: Combine 2 cups of the chicken broth and the rice, garlic, bay leaf and thyme bundle in a medium pot. Bring to a boil. Cover and simmer until the rice is tender, about 15 minutes. Remove the bay leaf and thyme; fluff the rice.
  • Heat the oil in a large cast-iron skillet over medium-high heat. Add the celery, onions and bell peppers and sweat the vegetables for about 5 minutes. Add the chicken hearts and livers, andouille and corn; cook until browned. Add the remaining 1 cup chicken broth and scrape the bottom of the pan to loosen any browned bits. Stir in the kidney beans. Add the garlic powder, paprika, cayenne, onion powder, oregano, thyme, red pepper flakes and 2 teaspoons salt. Simmer until the liquid reduces and everything is cooked through, about 10 minutes. Add the rice to the skillet and stir to combine. Remove from the heat. Sprinkle with the sliced scallions.
  • For the chicken: Preheat the oven to 400 degrees F.
  • Heat 1 tablespoon of the oil in a large ovenproof saute pan over medium-high heat. Sprinkle the chicken breasts with salt all over and place them skin-side down in the pan. Sear both sides until golden brown. Add the butter and Worcestershire sauce and baste the chicken for a minute. With the breasts skin-side down, transfer the pan to the oven and cook until the internal temperature reads 160 degrees F, 10 minutes. Let rest for 5 minutes.
  • Prepare an ice water bath in a bowl. Bring a large pot of salted water to a boil. Add the green beans to the pot and cook until bright green, about 3 minutes. Remove the green beans and immediately shock them in the ice bath to stop cooking; drain. Heat the remaining tablespoon oil in a medium saute pan over medium heat. Add the green beans and cook until warmed through and tender.
  • Serve the chicken with green beans and dirty rice.

DIRTY RICE

Dirty Rice image

This rice gets its "dirty" color from small pieces of chicken livers.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 15

1 1/2 cups long-grain rice
2 1/2 teaspoons salt
1 tablespoon unsalted butter
3 tablespoons vegetable oil
1 medium red onion, finely chopped
2 cloves garlic, peeled, finely chopped
1/2 pound chicken livers, cleaned and finely chopped
2 scallions, trimmed, white and green parts, cut crosswise into 1/8-inch pieces
2 stalks celery, including leafy greens, finely chopped
1/4 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh or dried oregano
1 jalapeno pepper, seeds and ribs removed, finely chopped
1/2 teaspoon freshly ground black pepper

Steps:

  • Bring 3 cups water to a boil in a saucepan. Stir in rice, 1 teaspoon salt, and butter. Cover, reduce heat to low, and cook 15 to 17 minutes, until water is absorbed. Set aside.
  • Heat oil in a cast-iron skillet over medium-high heat. Add onions and garlic; reduce heat to medium. Cook, stirring occasionally, until brown, about 10 minutes. Add chicken livers; cook, stirring, 5 minutes. Add rice and all remaining ingredients. Cook, tossing and stirring, until hot, 2 to 3 minutes. Serve immediately.

Tips:

  • Use a well-seasoned cast iron skillet. A well-seasoned skillet will prevent the chicken and rice from sticking and will help to create a flavorful crust on the chicken.
  • Cook the chicken in batches. Don't overcrowd the skillet, or the chicken will not cook evenly. Cook the chicken in batches, removing it from the skillet once it is browned on both sides.
  • Use a flavorful broth. The broth you use to cook the rice will add a lot of flavor to the dish. Use a broth that you enjoy the taste of, such as chicken broth, vegetable broth, or beef broth.
  • Add plenty of vegetables. Vegetables add flavor, color, and nutrients to the dish. Use any vegetables you like, such as bell peppers, onions, carrots, celery, or peas.
  • Season the rice well. The rice is the base of the dish, so it's important to season it well. Use a variety of spices, such as salt, pepper, garlic powder, and onion powder.
  • Cook the rice until it is tender. The rice should be cooked until it is tender but still has a slight bite to it. This usually takes about 18-20 minutes.
  • Serve the chicken and rice with your favorite toppings. Some popular toppings include shredded cheese, sour cream, salsa, and guacamole.

Conclusion:

Cast iron skillet chicken and dirty rice is a flavorful and easy-to-make dish that is perfect for a weeknight meal. The chicken is cooked in a flavorful broth and is then combined with rice, vegetables, and spices. The dish is then cooked in a cast iron skillet until the rice is tender and the chicken is cooked through. Cast iron skillet chicken and dirty rice is a delicious and hearty dish that is sure to please everyone at the table.
