3 lb groud beef
2 eggs
1/2 small onion diced
1/2 c italian bread crumbs
2 Tbsp minced garlic
3 Tbsp milk
3 Tbsp favorite house seasoning
2 small shot size bottle of jack dan.
1 small tomato sauce
1 tsp mustard, spicy brown
1 Tbsp honey

Steps:

  • 1. Start by mixing the egg,onion,garlic,milk,bread crumbs,seasoning,1bottle of JD and meat last and mix will then place in a foil lined Cassarole dish and cover with foil.
  • 2. Place in a Preheated oven 350 for 1 hour.
  • 3. In a small sauce pan mix Tomato Sauce,Honey and Mustard and 1 bottle of the JD allow to come to a simmer for 5min Set aside When the meat loaf has about 15mins left remove foil and pour over the meat loaf and let cook he last 15min. Once done remove from oven and slice to fit your family.

3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.

1 1/2 lb ground chuck
1 medium chopped onion
1 c garlic and herb bread crumbs
1 c milk
1 Tbsp worcestershire sauce
2 Tbsp ketchup
1 tsp mustard
Salt and pepper to taste
GLAZE
1/2 c each - ketchup & water
1 Tbsp mustard
1/4 c plus two tablespoons brown sugar
1/8 tsp salt

Steps:

  • 1. Preheat oven to 350 degree F. In a medium bowl, with clean hands, mix together all indredients for meatloaf until all ingredients are evenly distributed.
  • 2. Spray a small roaster or baking dish and pat meat mixture out into loaf form.
  • 3. Make glaze by whisking together until sugar is dissolved.
  • 4. Brush top and sides of meatloaf and place in oven and bake for 1 hour and 15 minutes or until reaches 160 degree, glazing several times as it bakes. I cover my meatloaf for the first 30 minutes.
  • 5. Once finished, remove from oven and let set for 10 minutes before slicing. If you have glaze left, heat and serve along side. Enjoy!

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. I think I'm incapable of following a recipe as it is written, this meatloaf recipe is the result of that habit. I started with a different recipe and tweaked it so much that it doesn't even resemble the original anymore, lol. Hope you enjoy it as much as I do. I sometimes use ground venison instead of beef. Makes great stuffed pepper filling too.

1 1/4 lbs ground beef
1 lb ground pork
1/3 cup cornmeal, i actually use maseca but it won't recognize that ingredient
2 eggs
1 medium white onion, finely chopped
2 teaspoons seasoning salt, I use Adobo with cumin
1 teaspoon black pepper
8 tablespoons ketchup
1 cup whole milk
1 (8 ounce) can sweet corn, drained
8 tablespoons apple cider vinegar
8 tablespoons dark brown sugar, packed firm (to taste)
1 cup ketchup

Steps:

  • Meatloaf: Combine meat loaf ingredients and place into meatloaf pan or regular loaf pan. I usually have a little left over because the pan I use is a small one. The excess I freeze for future use as stuffed pepper filling (there's usually enough for 2 peppers).
