1 lb ground beef
1 teaspoon salt (or to taste)
1 small onion, chopped
1 (16 ounce) can tomato sauce
1 cup water
1 teaspoon sugar
1/4 teaspoon oregano
1/4 teaspoon nutmeg
1 (8 ounce) package noodles
2 (10 ounce) packages spinach (thawed and drained)
1 cup ricotta cheese
1/2 cup sour cream
1/4 cup grated parmesan cheese

Steps:

  • Brown beef; add salt and onion. Cook 5 minutes. Add tomato sauce, water, sugar and spices. Set aside.
  • Cook noodles until barely tender. Drain. Add meat sauce mixture.
  • Squeeze dry spinach and chop coarsley.
  • In 3-quart casserole dish, layer half of meat sauce mixture, add next layer of spinach, then remainder of meat sauce mixture.
  • Blend ricotta and sour cream. Spoon over top. Sprinkle with Parmesan cheese.
  • Bake 25-30 minutes in a preheated 375-degree oven.

2 Tbsp butter
2 Tbsp flour
1 c milk
1/2 tsp salt
1 c cheese mozzarella, shredded
1/2 lb italian sausage, mild, remove casings
1 c zuchinni, sliced
2 c pasta, cooked ( i use wide egg noodles)
1/2 c tomatoes, chopped
1/4 c onions

Steps:

  • 1. 1. Make white sauce with the butter, milk, flour and salt. Add, 1/2 cup cheese and stir until melted. Remove casings from sausage, cut into pieces, brown in skillet.
  • 2. 2. Add zuchinni, and onion. cook until tender, drain. Stir in white sauce, noodles and tomato. Pour into 1 1/2 qt. casserole dish. top with remaining cheese.
  • 3. 3. Bake at 350* for 20 minutes. pass a tossed green salad and garlic bread for a yummy quick dinner, great leftover also. I usually have to double this recipe, the flavors are wonderful together, enjoy. xoxo. freezer friendly..

1 tsp salt
1/2 c onion,chopped
29 oz can tomato sauce
1 c water
1 tsp oregano
8 oz pasta,noodles or elbow macaroni
Two-10 oz pkgs.thawed spinach,squeezed dry
1 c ricotta or cottage cheese
1/2 c dairy sour cream
1/4 c parmesan cheese, grated

Steps:

  • 1. Lightly brown meat in a large skillet. Add salt and onion and cook about 5 minutes. Add tomato sauce, water and oregano. In another pan, cook noodles until al-dente; drain, add to beef mixture. Combine sour cream and ricotta cheese. In a 9x13-inch casserole dish, layer half of the noodle mixture, add the spinach in a layer and dollop 1/2 of the sour cream mixture. Top with remainder of noodles and rest of sour cream mixture. Sprinkle with Parmesan cheese. Bake at 375^ for 30-40 minutes.

2 10 ounce packages frozen chopped spinach, thawed and drained
1 cup Ricotta or cottage cheese
1/2 cup sour cream
1 cup mozzarella cheese, grated
1/4 cup parmesan cheese, grated

Steps:

  • Lightly brown meat in large skillet. Add salt and onion and cook another 5 minutes. Add tomato sauce, water and oregano. In another pan, cook noodles until done; drain, add to beef sauce. Combine sour cream and ricotta cheese in a bowl. In a 9x13 pan, layer half of the noodle mixture; add the spinach in a layer and dollop half of the sour cream mixture. Sprinkle mozzarella over the layers Top with remainder of noodles and rest of sour cream mixture. Sprinkle with Parmesan cheese. Bake at 375 degrees for 30 to 40 minutes. Serves 6 to 8. I accidently put the whole ricotta mixture on as one layer. It was still excellent.
