1 tablespoon extra-virgin olive oil, plus more for the baking dish
Kosher salt
3 cups wide egg noodles (about 5 ounces)
1 1/2 cups sour cream
1/2 cup freshly grated Parmesan
12 ounces ground beef
1 red bell pepper, seeded and chopped
1 bunch scallions (white and green parts), finely chopped
1 tablespoon tomato paste
1 teaspoon Italian seasoning
One 14 1/2-ounce can petite diced tomatoes
2 cups grated Cheddar

Steps:

  • Preheat the oven to 425 degrees F. Oil a 2-quart baking dish.
  • Bring a large pot of salted water to a boil. Add the noodles and cook to al dente according to the package directions. Drain and put in the prepared baking dish. Toss with the sour cream, Parmesan and 1/4 teaspoon salt.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, stirring, until no longer pink, about 4 minutes. Add the bell peppers and scallions and cook until crisp-tender, about 3 minutes. Make a space in the pan, add the tomato paste and toast for a minute. Sprinkle with the Italian seasoning and 1/4 teaspoon salt. Add the diced tomatoes, stir and bring to a simmer. Cook until slightly thickened, about 2 minutes.
  • Pour the beef mixture over the noodles and sprinkle with the grated Cheddar. Bake on the middle rack until the cheese is melted and the edges are bubbling, 15 to 20 minutes. Let stand for 10 minutes before serving.

1 pound ground beef
3/4 cup chopped onion
2 cans (8 ounces each) tomato sauce
1/2 teaspoon garlic powder

1 cup 4% cottage cheese
1/2 cup grated Parmesan cheese
1/3 cup sliced green onions

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking it into crumbles; drain. This is a fun little casserole. It is easy/peasy to assemble, and you probably have all the elements you need in your pantry, and fridge/freezer. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
1 Tbsp grapeseed oil
1 Tbsp sweet butter, unsalted
1/2 large yellow onion, chopped
2 clove garlic, minced
1 lb chuck roast, medium grind
2 Tbsp ketchup
1 Tbsp sour cream
2 Tbsp yellow mustard
1 tsp salt, kosher variety
1/2 tsp ground cumin
1/2 tsp white pepper, freshly ground
3/4 c cheddar cheese, freshly grated
4 slice provolone cheese
1 1/2 c dried bread cubes

Steps:

  • 1. PREP/PREPARE
  • 2. I ground my roast to what is called a "chili" grind. Most packages of ground beef are of a finer grind, but I like mine a bit coarser. The actual type of grind you choose does not impact this recipe. So, if you want, just go out and pick up a pound of ground chuck.
  • 3. For my bread cubes, I just cut up some fresh bread, and dried them in a warm oven for about an hour.
  • 4. For this recipe I used an 8-inch (20cm) square baking dish.
  • 5. Gather your ingredients (mise en place).
  • 6. Place a rack in the bottom position, and preheat the oven to 400f (205c).
  • 7. Add the butter and oil to a skillet over medium heat.
  • 8. When the foaming subsides, add the onions, and cook until they begin to soften, about 2 - 3 minutes.
  • 9. Add the garlic, and cook for about 60 seconds.
  • 10. Add the ground beef, salt, pepper, cumin, sour cream, yellow mustard, and ketchup.
  • 11. Stir and cook until the meat is just brown, about 5 - 7 minutes.
  • 12. Take off heat, and allow to cool for about 10 - 15 minutes.
  • 13. Add the bread cubes to a baking dish.
  • 14. Stir in the cheddar cheese to the beef mixture, and place on top of the bread cubes.
  • 15. Add the provolone on the top.
  • 16. Place into the preheated oven, and bake until the casserole is heated through, and the cheese is nice and melty, about 20 - 22 minutes.
  • 17. PLATE/PRESENT
  • 18. Serve while nice and warm with a small salad. Enjoy.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).

Served this on (Cinco De Mayo), as one of the items for a little party. I call it hybrid, because it has a few ingredients in it that are, shall we say, not strictly South-of-Border fare. Even though, it was not "strictly" a traditional Mexican dish, it was still one of the more popular dishes at the fiesta. I made three of them, and there were no leftovers. So, you ready... Let's get into the kitchen.

1 medium yellow onion, chopped

  • PREP/PREPARE
  • I created this recipe because I wanted one more dish for my Cinco De Mayo party; however, since time was short, I went with items on hand. I was going to make it into a Mexican Lasagna, using flour tortillas for the layers. Unfortunately, cooking them with the casserole would create a doughy, goopy mess. I thought of rice, and corn tortillas; even using regular lasagna noodles. I finally, dropped the idea of making it into a lasagna, and opted instead to make a nice flavorful casserole, and allow my guests to scoop some out and decide for themselves what they wanted to eat it on... success.

  • If you are grinding your own beef, use the large holes on the grinder plate. If you are purchasing it from the butcher, ask for "chili grind" beef. It is a bit coarser, and gives the casserole more of a hardier texture.
  • A skillet big enough to hold all of the ingredients. An ovenproof dish, to bake it in.
  • Gather your ingredients (mise en place).
  • Use a spice grinder, or mortar and pestle, to grind up the dehydrated onions.
  • Add the ground beef, chopped onions, and dehydrated onions to a skillet over medium-low heat.
  • Cook the ingredients, stirring often, until the beef is cooked through (no pink), and the chopped onions are soft, about 12 - 15 minutes.
  • Chef's Note: Why regular onions and dehydrated onion? Well, dehydrated onions bring an "earthy" taste to a recipe that you cannot get from using just regular onions alone. If you do not have any, no worries, just leave them out.
  • Add the garlic, and stir for an additional 60 seconds.
  • Add the tomatoes, enchilada sauce, and cumin, stir, reduce the heat to low, then allow to slowly simmer, for about 20 minutes.
  • Chef's Note: This slow cooking method serves two important purposes: 1. It helps to blend the flavors of the ingredients together. 2. It reduces the liquid to make a thicker sauce.
  • Do a final tasting for proper seasoning, and add a bit of salt and pepper, if you feel it is warranted.
  • THE ASSEMBLY
  • Place a rack in the middle position, and preheat the oven to 375f (190c).
  • Add refried beans to the bottom of a standard deep-dish, ovenproof pie pan, or similar round, or rectangular dish.
  • Add the parmesan cheese, and sprinkle with half the black olives.
  • Add the hot, ground-beef filling and top with the cheddar, and pepper jack.
  • Place into the preheated oven, and cook until the cheese is bubbly, and some of the filling begins to ooze up through the cheese, about 15 - 20 minutes.
  • PLATE/PRESENT
  • Allow to rest for 10 minutes, sprinkle on the remaining black olives, and serve up with some warm tortillas, and rice, with some sour cream, and lime slices on the side. 1 1/3 cups water

3/4 cup shredded Cheddar cheese (3 ounces)
2 tablespoons Progresso™ dry bread crumbs (any flavor)

2 eggs, beaten

Steps:

  • Heat oven to 325°F. Lightly grease quiche dish, 9x1 1/2 inches.
  • Mix mushrooms, onion, rice and water in 3-quart saucepan. Heat to boiling; reduce heat. Cover and simmer about 20 minutes, stirring occasionally, until rice is tender. Stir in broccoli and cottage cheese. Stir in remaining ingredients except 1/4 cup Cheddar cheese. Spoon into quiche dish.
  • Bake uncovered 40 minutes. Sprinkle with 1/4 cup Cheddar cheese. Bake 10 to 15 minutes or until center is hot. Let stand 5 minutes before cutting.
