CASHEW SNOWBALLS
These are very similar to those "butterball" Christmas cookies that I always remember around the holidays. However, these use CASHEWS, which really add a wonderful flavor! I made these for Christmas cookies in 2003, and they were, by far, everyone's favorite!

TRIPLE NUT SNOWBALLS
This super-crunchy, not-too-sweet cookie is a fun update on the classic snowball. I used cashews, macadamia nuts and pecans, but you can mix and match other nuts to your liking. -Thomas Faglon, Somerset, New Jersey

A juicy maraschino cherry is the secret center tucked inside these special cookies. My mom was inspired to create this by a recipe she clipped out of a newspaper more than 30 years ago. -Evy Adams, West Seneca, New York

Tips:
- Chill the dough before baking: Chilling the dough helps to prevent the cookies from spreading too much in the oven, resulting in a more uniform shape and texture.
- Be careful when mixing the dry ingredients: Overmixing the dry ingredients can result in tough cookies. Mix just until the ingredients are combined.
- Use high-quality ingredients: The better the ingredients you use, the better your cookies will taste. Look for fresh, high-quality nuts, butter, and sugar.
- Don't overbake the cookies: Overbaked cookies will be dry and crumbly. Bake the cookies just until they are set and the edges are just beginning to brown.
- Let the cookies cool completely before rolling them in powdered sugar: This will help to prevent the powdered sugar from melting and becoming absorbed into the cookies.
Conclusion:
Cashew Snowballs are a delicious and festive holiday cookie that is sure to be a hit with everyone who tries them. With their rich, buttery flavor and melt-in-your-mouth texture, these cookies are perfect for any holiday gathering.
