Time 2h20m

Yield 2 dozen biscotti

Number Of Ingredients 10

4 large eggs
1 cup sugar
Grated zest from 1 orange plus 1 teaspoon juice
2 tablespoons vegetable oil
1 teaspoon almond extract
1/2 teaspoon vanilla extract
3 1/3 cups all-purpose flour
2 teaspoons baking powder
1 cup chopped almonds or nuts of your choice
Nonstick cooking spray

Steps:

  • In a large bowl, beat the eggs and sugar together at high speed with an electric mixer until foamy, about 5 minutes. Add the orange zest and juice, oil, almond extract and vanilla extract, beating until blended. Sift the flour and baking powder together and add to the egg mixture, beating well. Fold in the almonds by hand. Remove the dough to plastic wrap, wrap and freeze until firm, about 30 minutes.
  • Meanwhile, preheat the oven to 325 degrees F. Spray a baking sheet with nonstick cooking spray. Divide the dough in half. Spray your hands lightly with nonstick cooking spray and shape each portion into a 5-by-8-inch log on the baking sheet. Bake until firm, about 25 minutes. Cool the logs on the baking sheet for 5 minutes, then transfer to wire racks to cool completely, about 15 minutes.
  • Using a serrated knife, cut each log diagonally into 1/2-inch slices. Return the biscotti to the baking sheets and bake for 15 minutes. Turn the cookies over and bake for 15 more minutes. Cool on wire racks.

VEGAN CRANBERRY CASHEW BISCOTTI

Vegan Cranberry Cashew Biscotti image

I came up with this recipe for my mother who is allergic to certain nuts and fruits. The original recipe I altered was an almond biscotti from Vegan Planet by Robin Robertson, which I used for measurement reference.

Time 55m

Yield 36 biscottis

Number Of Ingredients 10

1/3 cup margarine, softened (Earth Balance)
2/3 cup organic sugar
2 Ener-G Egg Substitute
1 teaspoon vanilla extract (I like vanilla paste)
1/4 teaspoon almond extract
1 1/2 cups unbleached all-purpose flour
1/2 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 cup dried cranberries, roughly chopped
1/4 cup raw unsalted cashews, chopped

Steps:

  • Preheat oven to 350°F.
  • Cream margarine and sugar together until light and fluffy. Blend in the "eggs" and extracts. Mix in the flour and baking soda. Stir in the cranberries and cashews. Chill for 10 minutes.
  • Divide the chilled dough in half and shape into a 1 inch-thick rectangular slabs on an lined, oiled baking sheet. Flatten the slabs slightly by evenly patting them down. Bake until they are golden brown and a toothpick inserted in the center comes out clean, about 25 minutes. Remove from the oven and reduce the oven temperature to 275°F.
  • Let slabs cool for 10 minutes, then cut each slab into 1/2 inch-wide slices. Place sliced biscottis on their sides on an ungreased baking sheet (just simply remove the lining from the one you just used) and bake for another 8-10 minutes until they are crisp and dry. Let cool completely before storing in an airtight container. They will keep for a few days, but I suggest freezing half. They taste great frozen!

Serve these irresistible salty-sweet cashews with our Butternut Squash Soup.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Yield Makes 2 cups

Number Of Ingredients 8

2 1/2 cups whole cashews
1/4 cup light corn syrup
1/2 teaspoon coarse salt
1 1/2 teaspoons finely grated orange zest
3/4 teaspoon ground ginger
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
Pinch of cayenne pepper

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper; set aside. In a medium bowl, mix cashews with corn syrup until evenly coated. Set aside.
  • In a small bowl, combine salt, zest, ginger, coriander, cumin, and cayenne. Sprinkle mixture over nuts, and stir until nuts are evenly coated. Transfer to one of the prepared baking sheets; spread in a single layer, separating nuts.
  • Bake until the nuts are golden and the syrup is bubbling, about 15 minutes. Immediately transfer nuts to the other baking sheet. Separate cashews; let cool.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the biscotti will be.
  • Make sure the butter and eggs are at room temperature before you start baking. This will help them to mix together more easily and create a smoother batter.
  • Don't overmix the batter. Overmixing can make the biscotti tough.
  • Chill the biscotti dough for at least 30 minutes before baking. This will help the dough to firm up and make it easier to slice.
  • Bake the biscotti until they are golden brown and crispy. This will ensure that they are cooked through.
  • Let the biscotti cool completely before slicing. This will help them to keep their shape.
  • Store the biscotti in an airtight container at room temperature for up to 2 weeks.

Conclusion:

Cashew orange biscotti are a delicious and easy-to-make treat. They are perfect for snacking, serving with coffee or tea, or giving as gifts. With their bright citrus flavor and crunchy texture, these biscotti are sure to be a hit with everyone who tries them.
