CASHEW FETTUCCINE ALFREDO

Cashew Fettuccine Alfredo image

WOW! This cashew fettuccine alfredo tastes decadent, but the creamy sauce is filled with healthy plant based ingredients. An easy dinner in under 30 minutes!

Provided by Sonja Overhiser

Categories     Main Dish

Time 25m

Yield 8

Number Of Ingredients 11

1 pound fettuccine noodles (use gluten-free, legume, or zucchini noodles if desired)
4 garlic cloves
1 small head cauliflower (1 1/2 to 2 pounds), enough for 6 cups florets
4 tablespoons olive oil
1 cup raw unsalted cashews
2 cups vegetable broth
1/8 teaspoon onion powder
1/8 + 1/4 teaspoon ground black pepper
Pinch nutmeg
1 teaspoon kosher salt
Finely chopped parsley, to serve

Steps:

  • Mince the garlic. Chop the cauliflower.
  • Make the pasta: Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). Then drain the pasta and return it to the pot.
  • Meanwhile, start the sauce: Heat the olive oil in a large Dutch oven, pot, or saucepan (that has a cover) over medium heat. Add the cauliflower and cashews and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, onion powder, black pepper, nutmeg and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.
  • Blend the sauce: Carefully transfer the contents to a blender and add the remaining 1/2 teaspoon kosher salt and 1/4 teaspoon more black pepper. Blend on high until a smooth sauce forms.
  • Serve: Pour about 5 cups into 1 pound pasta (1 cup will be left over), or use it to taste. Top with finely chopped parsley and serve immediately.

FRIED CASHEWS WITH LIME ZEST AND CHILE

Fried Cashews With Lime Zest and Chile image

This is my take on a popular bar snack in Thailand: freshly fried cashews tossed with salt, chiles, scallions, and lime zest. Simple but so good with a beer.

Provided by Pepper Teigen

Yield Makes 1 cup

Number Of Ingredients 7

Vegetable oil, for shallow frying
1 cup raw cashews
1 teaspoon kosher salt
2 teaspoons light brown sugar
2 scallions, thinly sliced
2 teaspoons Roasted Chile Powder
2 teaspoons grated lime zest

Steps:

  • Fill a small saucepan with 1 inch oil and set over medium heat. Line a plate with paper towels and set it near the stove.
  • When the oil is shimmering-hot, carefully add the cashews and fry, stirring constantly, until light golden brown, 1 to 2 minutes. Keep in mind: The cashews will continue to cook after being removed from the oil and become a darker shade of brown, so it's best to remove them when they are still a little pale. Use a slotted spoon to transfer the cashews to the paper towels to drain.
  • Place the hot cashews in a serving bowl and sprinkle evenly with the salt and brown sugar, tossing to coat. Add the scallions, chile powder, and lime zest and toss once more. Serve warm.

CASHEW CAKE

Cashew Cake image

Very good, very simple cake my mom gets every year for Mother's Day. I sometimes add crushed cashews to the cake batter as well.

Provided by Felix4067

Categories     Dessert

Time 1h

Yield 8 serving(s)

Number Of Ingredients 10

1 (18 1/4 ounce) package butter recipe cake mix
1 cup butter, softened and divided
2/3 cup water
3 eggs
1 teaspoon almond extract
4 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon rum extract
1 cup finely crushed cashew nuts
whole cashew nuts (to garnish)

Steps:

  • Coat two 8-inch round cake pans with nonstick cooking spray, and lightly flour.
  • In a large bowl, combine the cake mix, 1/2 cup butter, the water, eggs, and almond extract; mix well.
  • Pour the batter into the prepared cake pans, dividing evenly.
  • Bake for 25 to 30 minutes, or until a wooden toothpick inserted in the center comes out clean.
  • Let cool, then remove from the pans to cool completely.
  • Meanwhile, in a medium bowl, make frosting by combining the remaining 1/2 cup butter, the confectioners' sugar, milk, and rum extract; mix until smooth.
  • Stir in the crushed cashews until mixed through.
  • Place 1 cake layer upside down on a serving plate and frost the top.
  • Place the second layer over the first and frost the top and sides of the cake completely.
  • Garnish with the whole cashews then cover loosely and chill until ready to serve.

Tips:

  • Use fresh ingredients: Fresh ingredients will result in a more flavorful and delicious cake.
  • Properly measure your ingredients: Incorrect measurements can lead to a cake that is too dense, too dry, or too sweet.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the batter, resulting in a lighter and more tender cake.
  • Gradually add the eggs to the batter: Adding the eggs all at once can cause the batter to curdle.
  • Do not overmix the batter: Overmixing the batter can result in a tough, dense cake.
  • Bake the cake at the correct temperature: Baking the cake at too high of a temperature can cause the cake to brown too quickly on the outside while remaining uncooked on the inside.
  • Allow the cake to cool completely before frosting: This will help to prevent the frosting from melting.
  • Use a variety of nuts in the cake: This will add flavor and texture to the cake.
  • Store the cake in an airtight container at room temperature: The cake will keep for up to 3 days.

Conclusion:

Cashew nut cake is a delicious and versatile dessert that can be enjoyed by people of all ages. It is perfect for any occasion, from birthdays to holidays. With its moist texture, rich flavor, and beautiful appearance, cashew nut cake is sure to be a hit with everyone who tries it.
