1 zucchini (diced)
1 red bell pepper (cut into one inch cubes)
1 cup sliced mushrooms
1/2 cup shredded carrots
1 cup snow peas
1 cup whole cashews
3/4 cup chicken broth
1/4 cup low sodium soy sauce
3 cloves garlic (minced)
1 Tablespoon brown sugar
1 teaspoon sesame oil
1 Tablespoon cornstarch
2 Tablespoons water
green onions (sliced for garnish)

Steps:

3 tablespoons water
1 1/2 tablespoons cornstarch
3 tablespoons vegetable oil

3/4 cup stir-fry sauce, Your favorite brand
1/2 cup unsalted roasted cashews

  • Blanch vegetables 2-3 min in large pot of boiling salted water until crisp-tender. Drain; transfer to bowl of ice water. Drain and set aside.

500 g chicken breast fillets, thinly sliced
1 cup stir fry vegetables

1/2 cup toasted cashew nuts
