CASHEW CHICKEN LETTUCE WRAPS

This is from a great cookbook called "Breast Wishes" which is put together by some ladies from a small town to raise money for breast cancer research! They even test all their recipes before they put them in! Haven't hit a bad one yet! I've even subbed in peanuts for the cashews when I was out - still yummy!

From here: http://www.shewearsmanyhats.com/2009/09/chicken-cashew-lettuce-wraps/ I have made these several times with great success. Always a pleaser. I make them gluten free, so I use a gluten-free soy sauce.

Time 25m

Yield 4 , 4 serving(s)

Number Of Ingredients 13

12 ounces boneless skinless chicken breasts
1 1/2 tablespoons canola oil
1 cup onion, diced
2 garlic cloves, minced
1 teaspoon soy sauce
1/4 cup cashews, chopped
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1/4 teaspoon ground red pepper
1/4 teaspoon ground ginger
1 teaspoon sesame oil
8 leaves iceberg lettuce

Steps:

  • Mix all stir fry sauce ingredients. Set aside.
  • Heat oil over medium high heat and add chicken. Brown chicken (4-5 minutes).
  • Remove chicken from pan and add onions, garlic, and 1 tsp soy sauce. Brown.
  • When onions are tender, return chicken to pan and add cashews. Stir fry for a minute or two to reheat chicken.
  • Add stir fry sauce and saute for a few more minutes.
  • Remove from heat and spoon into lettuce leaves to serve.

Tips:

  • Use high-quality ingredients. Fresh, flavorful ingredients will make your lettuce wraps taste their best. Look for crisp lettuce, tender chicken, and crunchy cashews.
  • Don't overcook the chicken. Chicken that is cooked too long will be dry and tough. Cook it just until it is cooked through, about 5-7 minutes.
  • Make sure the sauce is thick and flavorful. The sauce is what brings all the flavors of the lettuce wraps together. Make sure it is thick enough to coat the chicken and vegetables, and that it has a good balance of sweet, sour, and salty flavors.
  • Use a variety of vegetables. The more vegetables you use, the more colorful and flavorful your lettuce wraps will be. Try using a mix of crunchy vegetables, like carrots and celery, and softer vegetables, like bell peppers and mushrooms.
  • Don't be afraid to experiment. There are many different ways to make lettuce wraps. Feel free to experiment with different ingredients and flavors until you find a combination that you love.

Conclusion:

Cashew chicken lettuce wraps are a delicious, healthy, and easy-to-make meal that is perfect for any occasion. They are also a great way to use up leftover chicken. With a little planning, you can have a delicious and satisfying meal on the table in no time. So next time you are looking for a quick and easy meal, give cashew chicken lettuce wraps a try. You won't be disappointed!
