This is unique and fast because you do not have to cook the macaroni first! Prep time does not include overnight refrigeration. If you do not have time, just omit the overnight refigeration. I have done that in the past with no problems.

Tips for Making Cashew Chicken Casserole:

  • Use high-quality chicken: Look for boneless, skinless chicken breasts or thighs that are fresh or frozen. If using frozen chicken, thaw it completely before cooking.
  • Marinate the chicken: Marinating the chicken in a mixture of soy sauce, rice vinegar, and garlic powder adds flavor and helps tenderize the meat.
  • Use a variety of vegetables: This recipe calls for broccoli, carrots, and bell peppers, but you can also add other vegetables such as snow peas, baby corn, or mushrooms.
  • Don't overcook the vegetables: They should be cooked until they are tender but still have a slight crunch.
  • Use a good quality cashew: Look for cashews that are fresh and not rancid. You can also toast the cashews in a dry skillet over medium heat for a few minutes to enhance their flavor.
  • Serve the casserole hot: This dish is best served immediately after it is cooked, while the chicken is still juicy and the vegetables are still crisp.

Conclusion:

Cashew chicken casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor from the marinated chicken, the variety of vegetables, and the creamy sauce. The cashews add a crunchy texture and a nutty flavor that complements the other ingredients perfectly. This casserole is sure to be a hit with your family and friends.
