Provided by carvalhohm

Number Of Ingredients 14

2 teaspoons canola oil
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 teaspoon finely chopped fresh ginger
2 cups fresh broccoli florets
1 cup chicken broth
1/8 teaspoon crushed red pepper flakes
2 cups frozen sugar snap peas
3 tablespoons reduced-sodium soy sauce
2 teaspoons rice vinegar
1 tablespoon cornstarch
1 teaspoon sugar
2 medium green onions, sliced
3 cups hot cooked brown rice
1/4 cup salted roasted cashew halves and pieces

Steps:

  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add chicken and ginger; cook and stir 4 to 5 minutes or until chicken begins to brown. Add broccoli, 1/2 cup of the broth and the pepper flakes. Cover; cook over medium heat 2 minutes, stirring once. Add peas; cook 2 to 4 minutes longer, stirring once, until vegetables are crisp-tender. In small bowl, mix remaining 1/2 cup broth, the soy sauce, vinegar, cornstarch and sugar; stir into chicken mixture. Add onions; cook, stirring frequently, until sauce is thickened and bubbly. Serve over rice; sprinkle with cashews.

Tips:

  • Use High-Quality Ingredients: Fresh, high-quality ingredients will elevate the flavor of your cashew chicken and broccoli dish. Look for vibrant, crisp broccoli florets and plump, creamy cashews.
  • Marinate the Chicken: Marinating the chicken in a flavorful mixture of soy sauce, ginger, garlic, and rice wine helps tenderize and infuse it with delicious Asian flavors.
  • Use a Wok or Large Skillet: A large wok or skillet allows you to cook the chicken, broccoli, and cashews together quickly while maintaining their crispness and vibrant colors.
  • Cook in Batches: If cooking for a large group, cook the chicken and vegetables in batches to prevent overcrowding the pan and ensure even cooking.
  • Adjust the Sauce to Your Liking: The sauce can be adjusted to your desired consistency and flavor. Add more cornstarch for a thicker sauce or more water for a thinner consistency. You can also adjust the amount of soy sauce, ginger, and garlic to suit your taste.

Conclusion:

Cashew chicken and broccoli is a classic Chinese-American dish that combines tender chicken, crisp-tender broccoli, and crunchy cashews in a flavorful sauce. With its vibrant colors, delicious flavors, and ease of preparation, this dish is a hit among people of all ages. Whether you're a seasoned home cook or a beginner in the kitchen, give this recipe a try and enjoy a satisfying and flavorful meal that's perfect for a weeknight dinner or a special occasion.
