ROASTED CASHEW BUTTER
Cashews have a relatively sweet flavor and a fairly soft texture, and are used to make all sorts of dairy-free alternatives, such as milk, cheese and ice cream. They also make a delightfully creamy nut butter. Roasting the raw nuts before blending coaxes out the nuttiest flavor. Flax seeds, sesame seeds and poppy seeds are all great add-ins for crunch, but you could also stir in some tahini, which intensifies the flavor and adds even more creaminess.

Steps:
- 1. Cream butters and sugars together thoroughly.
- 2. Add vanilla and egg mixing completely into creamed mixture. Then add salt (if using) and baking soda. I find that these items mix more completely if added to wet ingredients.
- 3. Add flour 1/2 cup at a time mixing thoroughly with each addition. Scoop onto cookie sheets spacing apart because they will spread.
- 4. Bake at 375 degrees for 9-10 minutes for a soft cookie. If you prefer a more crisp, slightly darker cookie you may bake up to 12 minutes.

Tips for Making the Best Cashew Butter:
- Use fresh, unsalted cashews. Fresh cashews will yield a better-tasting and more flavorful cashew butter. Avoid salted cashews, as they can make the butter too salty.
- Roast the cashews before blending. Roasting the cashews will help to bring out their natural flavor and make them more pliable, resulting in a smoother and creamier cashew butter.
- Start with a small batch. If you're new to making cashew butter, start with a small batch so that you can get the hang of the process. Once you're comfortable with the process, you can increase the batch size.
- Use a high-powered blender or food processor. A high-powered blender or food processor will be able to blend the cashews until they are smooth and creamy. If you don't have a high-powered blender or food processor, you can try using a regular blender or food processor, but it may take longer to achieve a smooth consistency.
- Be patient. Making cashew butter takes time. It may take several minutes of blending to achieve a smooth and creamy consistency. Be patient and keep blending until the cashew butter is the desired consistency.
Conclusion:
Cashew butter is a delicious and versatile nut butter that can be used in a variety of ways. It can be spread on toast or crackers, used as a dip for fruits or vegetables, or added to smoothies or yogurt. Cashew butter is also a good source of healthy fats, protein, and fiber. If you're looking for a healthy and delicious alternative to peanut butter, cashew butter is a great option. With just a few simple ingredients and a little bit of time, you can make your own delicious cashew butter at home.
