2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flour, baking soda, and salt together in a small bowl.
  • Beat butter, white sugar, and vanilla extract together with an electric mixer in a large bowl until smooth. Add cashew butter, brown sugar, egg, and milk to the butter mixture; beat until smooth. Gradually add flour mixture and mix until just incorporated into a dough.

1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 1/2 teaspoons pure vanilla extract
1 cup smooth cashew butter
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment or a silicone baking mat.
  • In a stand mixer fitted with the paddle attachment, combine the butter and both sugars. Beat on medium until light, fluffy and creamy. Add in the egg and vanilla. Mix to combine. Next, add in the cashew butter and mix until fully combined.
  • In a small bowl, whisk together the flour, baking powder, baking soda and salt. Slowly add to the butter mixture and mix on low speed until you no longer see any flour bits.
  • Using a medium cookie or ice cream scoop, scoop the dough, flattening the bottom, and place on the prepared baking sheet. Make lines or a crosshatch pattern on the top of each cookie with a fork.

1/4 cup sweet red pepper strips

  • Heat oven to 350°F. Grease 13x9-inch pan with shortening or cooking spray. In large bowl, mix granulated sugar, bananas, 1/3 cup butter and the eggs until blended. vegetable oil, for brushing
salt and pepper
2 ounces butter
2 ounces cashew nuts, shelled
2 garlic cloves, finely chopped
chopped parsley, a good handful
1 lemon, juice of

Steps:

  • Preheat hot grill or barbecue. Slash skins of fish deeply three times on each side to let the heat permeate the flesh. Remove the heads if you like.
  • Brush the fish lightly with oil, and season with salt and pepper both inside and out.
  • Cook under grill or on barbecue for 4 minutes on each side, or until the skin is browned and the flesh feels firm.
  • Melt the butter in a wide shallow pan, and fry the nuts quickly until toasted. Add the garlic and parsley, and fry the mixture briefly until the parsley darkens slightly.

We love this soft, flavorful cookie! Can't find cashew butter? No problem, you can make your own! Use a 14 oz can of cashews and 3 tablespoons of olive oil. Blend in a food processor until you get the consistancy of butter. Yum!!

1/2 c cashew butter, homemade or commercially made (if commercially made you may omit salt)
1/2 c granulated sugar
1/2 c light brown sugar
1 tsp real vanilla extract
1 large egg
1/8 tsp salt
1/2 tsp baking soda
1 1/2 c all purpose, unbleached flour

Steps:

  • 1. Cream butters and sugars together thoroughly.
  • 2. Add vanilla and egg mixing completely into creamed mixture. Then add salt (if using) and baking soda. I find that these items mix more completely if added to wet ingredients.
  • 3. Add flour 1/2 cup at a time mixing thoroughly with each addition. Scoop onto cookie sheets spacing apart because they will spread.
  • 4. Bake at 375 degrees for 9-10 minutes for a soft cookie. If you prefer a more crisp, slightly darker cookie you may bake up to 12 minutes.

This is another of my mother in law's Christmas specialties that she's passed along to me. Very easy, very pretty, and can be made ahead of time. Make sure your beans and red pepper are very fresh and blemish free for the best presentation.

2 lbs fresh green beans, ends trimmed
1 quart water
2 small red bell peppers
1/2 cup cashews, coarsley chopped
1/2 cup butter, melted
1/2 teaspoon lemon rind, grated
2 teaspoons lemon juice
2 tablespoons green onions, sliced
2 tablespoons parsley, chopped

Steps:

  • Bring water to a boil and add beans.
  • Cook uncovered 4-5 minutes until crisp tender.
  • Drain, plunge in cold water, and drain again.
  • Divide into 8 bundles.
  • Slice red peppers into 1/4 inch slices.
  • Wrap each bundle of beans with a red pepper slice. Secure with a toothpick if necessary, but be sure to remove them or warn your guests so they don't bite into one! (Don't ask -- ).
  • Arrange on a baking sheet. This can be refrigerated overnight, if you're making them ahead.
  • Cook cashews in butter, stirring until toasted and butter is lightly brown.
  • Remove from heat.
  • Add rind, juice, onions, and parsley. This may also be refrigerated overnight, covered.
  • Remove beans and butter mixture 30 minutes before serving. Warm butter if necessary.
  • Spoon butter mixture over beans.
  • Cover and bake at 350 for 10 minutes.
  • Spoon drippings over beans and serve.

Number Of Ingredients 10

60 g ghee or 60 g butter
2 cloves garlic, crushed
2 onions, minced
1 tablespoon tandoori curry paste
1 tablespoon ground coriander
1/2 teaspoon ground nutmeg
750 g boneless chicken, cut into 2 cm cubes
60 g cashews, slightly crushed
1 1/4 cups thickened cream
2 tablespoons coconut milk

Steps:

  • Melt ghee or butter, in a large pan over medium heat.
  • Add garlic& onions and cook, stirring, for 3 mins, or until onions are golden.
  • Stir in curry paste, coriander, and nutmeg.
  • Cook for 2 min, or until fragrant.
  • Add chicken and cook for 5 mins, or until chicken is browned.
  • Add cashwes, cream, and coconut milk.
  • Bring to the boil.
  • Reduce heat.
  • Simmer, stirring occasionally, for 40 mins, or until chicken is tender.
  • Serve with rice.

⅛ teaspoon sea salt
6 tablespoons rice bran oil

Steps:

  • Put cashews and sea salt in a food processor; add 2 tablespoons rice bran oil. Pulse until blended. Add 2 more tablespoons oil and pulse until mixture doesn't move. Add the last 2 tablespoons oil and pulse until a thick paste forms; continue pulsing until a smooth, viscous past forms.
