12 ounces trimmed boneless beef top round, cut across the grain into thin slices, slices cut into 1″ bite-size pieces
2 whole stalks broccoli, cut into small florets, stems halved lengthwise and very thinly sliced crosswise (about 5 cups)
1/3 cup reduced-sodium chicken broth
1 tablespoon cornstarch

Tips:

  • Choose the right cashews. You'll want to use raw, unsalted cashews for this recipe. Roasted or salted cashews will not work as well.
  • Soak the cashews. Soaking the cashews in hot water for 30 minutes will help to soften them and make them more tender.
  • Use a good quality soy sauce. The soy sauce is one of the key ingredients in this dish, so it's important to use a good quality one. Look for a soy sauce that is dark and flavorful.
  • Don't overcook the beef. The beef should be cooked until it is just tender, but not overcooked. Overcooked beef will be tough and chewy.
  • Serve the cashew beef immediately. This dish is best served immediately after it is cooked. The cashews will start to lose their crunch if they sit for too long.

Conclusion:

Cashew beef is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great dish to serve at parties or potlucks. With its tender beef, crunchy cashews, and flavorful sauce, cashew beef is sure to be a hit with everyone who tries it.
