3 tablespoons butter, melted
⅓ cup apricot preserves
¼ teaspoon ground nutmeg
¼ teaspoon salt

1 medium onion, cut in half, sliced
1/4 teaspoon salt
1/3 cup honey
1/3 cup apricot preserves
2 tablespoons chopped fresh parsley

  • In 4- to 5-quart slow cooker, place carrots and onion. Sprinkle with salt.
  • Cover; cook on Low heat setting 9 to 10 hours.

2 lb carrots, cut on diagonal
3 Tbsp butter or margarine
1/3 c apricot preserves
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 - 1 tsp freshly grated orange peel
2 tsp fresh lemon juice
parsley, for garnish

Steps:

  • 1. Cook scraped and cut carrots in salted water until just tender, about 20 minutes. Drain.
  • 2. Melt butter and stir in preserves until blended. Add nutmeg, salt, orange peel and lemon juice.
