Time 1h10m

Yield 8

Number Of Ingredients 11

2 tablespoons butter
1 Spanish onion, chopped
6 cups reduced-fat chicken broth
5 carrots, peeled and sliced
3 small potatoes, peeled and sliced
1 teaspoon herbes de Provence
1 pinch dried thyme
1 bay leaf
salt and pepper to taste
¼ cup heavy cream
8 sprigs parsley

Steps:

  • Melt the butter in a large pot over low heat. When the butter begins to foam, add the onion; cook until the onion begins to turn translucent, 3 to 4 minutes. Add the chicken broth, carrots, potatoes, herbes de Provence, thyme, and bay leaf; season with salt and pepper. Raise heat to medium-high and bring to a boil; reduce heat again to low and simmer until the potatoes are tender, about 30 minutes.
  • Pour the soup into a blender, filling the pitcher no more than halfway. Securing the lid of the blender with a folded kitchen towel, start to blend using a few quick pulses before allowing to blend continually; puree in batches until smooth. Divide into eight soup bowls; garnish each portion with about 1/2 tablespoon heavy cream and a sprig of parsley.

Tips:

  • Choose the right type of pork ribs: Use meaty pork ribs such as baby back ribs or spare ribs. Avoid using country-style ribs, as they have less meat.
  • Brown the pork ribs before simmering: Browning the ribs adds flavor and color to the soup. Make sure to brown the ribs in batches to avoid overcrowding the pot.
  • Use a variety of vegetables: This recipe calls for carrots, potatoes, and celery, but you can also add other vegetables such as parsnips, turnips, or rutabagas.
  • Season the soup well: Use a combination of salt, pepper, garlic powder, and onion powder to season the soup. You can also add other herbs and spices such as thyme, rosemary, or bay leaves.
  • Simmer the soup for at least 1 hour: This will allow the flavors to meld and the vegetables to soften.
  • Serve the soup hot: Ladle the soup into bowls and serve it hot with a side of bread or crackers.

Conclusion:

This easy and flavorful soup is perfect for a cold winter day. The pork ribs, vegetables, and herbs create a hearty and satisfying meal that is sure to please the whole family. With a few simple tips, you can make this soup even better. So next time you're looking for a delicious and comforting soup, give this carrots, potatoes, and pork ribs soup a try.
