Number Of Ingredients 12

6 to 7 tablespoons harissa sauce
3 tablespoons extra-virgin olive oil
Kosher salt
16 large baby-cut carrots (about 2 inches each)
All-purpose flour, for dusting
One 7-ounce sheet all-butter puff pastry (half of a 14-ounce box, such as Dufour), thawed
1 large egg yolk
1 cup plain whole-milk Greek yogurt
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 teaspoon finely chopped tarragon leaves
1 tablespoon roughly chopped mint leaves

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment.
  • Stir to combine 2 tablespoons of the harissa with 1 tablespoon of the olive oil, 3/4 teaspoon salt and the carrots in a medium bowl. Stir until the carrots are evenly coated.
  • On a lightly floured surface, roll out the puff pastry to a 9-by-12-inch rectangle and brush with 2 to 3 tablespoons of the harissa. With the longer side closest to you, cut the puff pastry from left to right into eight 1 1/2-inch-wide strips. Cut each strip crosswise in half, creating 16 strips total.
  • Add 1 carrot to one end of a strip and roll to enclose. Transfer seam-side-down to the prepared baking sheet. Repeat with the remaining carrots and puff pastry. Whisk together the egg yolk and 1 tablespoon water in a small bowl and brush the tops with the egg wash.
  • Bake until the pastry is puffed and golden brown and the carrots are tender, about 30 minutes, rotating the baking sheet halfway through baking. Let cool on the baking sheet for 5 minutes.
  • Meanwhile, whisk together the yogurt, the remaining 2 tablespoons harissa, 1 tablespoon of the olive oil, the lemon zest, lemon juice, tarragon and mint; season with salt. 1 stick butter, melted
3 eggs
1 c sugar
3 Tbsp flour
1 tsp baking powder
1 tsp vanilla

Steps:

  • 1. Spray 8X8" pan with Pam. Cook carrots until tender (about 20 minutes). Blend margarine, eggs, sugar, flour, baking powder and vanilla until well blended.
  • 2. Add carrots & puree. Pour into baking dish should be about 1" deep. Bake at 350 for 45 minutes or until firm.

1 sheet frozen puff pastry (half of a 17-ounce package), thawed
Heavy cream or beaten egg, for brushing
Poppy seeds, for sprinkling
Dijon mustard and/or ketchup, for dipping

Steps:

  • Preheat the oven to 425˚ F. Trim and peel the carrots. If any sections are significantly wider than the others, peel them so the carrot is fairly even in width. Cut into 2-inch lengths and put in a large skillet. Add the butter, maple syrup, miso, coriander, garlic powder, paprika, a pinch each of salt and pepper and 1/2 cup water.
