CARROTS GLAZED WITH HONEY & BRANDY

Carrots Glazed with Honey & Brandy image

Categories     Vegetable

Number Of Ingredients 9

3 pounds carrots, peeled and cut diagonally in 1/4 inch thick slices
3 cups water
2 tablespoons sugar
1 teaspoon salt
6 tablespoons butter
3 tablespoons honey
1 1/2 tablespoons brown sugar
3 tablespoons brandy
3 tablespoons fresh chopped parsley

Steps:

  • Combine first 4 ingredients and 3 tbs butter in large saucepan. Bring to boil. Reduce heat, cover and simmer until carrots are tender about 10 minutes. Drain well.
  • In same skillet, melt rest of butter, honey and brown sugar until butter melts and sugar dissolves. Add carrots and brandy and cook until carrots are coated with glaze. (Can be made 2 hours ahead. Cover and let stand at room temperature. Reheat gently before serving).
  • Sprinkle with chopped parsley

Tips:

  • Select the right carrots: Choose fresh, tender carrots with smooth skin and no blemishes. Avoid large, thick carrots, as they tend to be less flavorful and take longer to cook.
  • Peel and cut the carrots evenly: This will ensure that they cook evenly. For baby carrots, simply trim the ends. For larger carrots, peel and cut them into 2-inch pieces or quarters, depending on their thickness.
  • Use good-quality honey: The honey you use will greatly affect the flavor of the glazed carrots. Choose a honey with a rich, robust flavor, such as clover or buckwheat honey.
  • Don't overcrowd the pan: When cooking the carrots, make sure they are in a single layer in the pan. Overcrowding will prevent them from cooking evenly and becoming nicely caramelized.
  • Cook the carrots until tender: The carrots should be tender but still have a slight bite to them. Overcooking will make them mushy.
  • Add the brandy and honey at the end: This will prevent the alcohol from evaporating and the honey from burning.
  • Serve immediately: Glazed carrots are best served warm. They can be reheated, but they will not be as flavorful.

Conclusion:

Glazed carrots are a delicious and versatile side dish that can be served with a variety of main courses. They are easy to make and can be tailored to your own taste preferences. Whether you like them sweet, savory, or somewhere in between, there is a glazed carrot recipe out there for you. So next time you are looking for a simple yet impressive side dish, give glazed carrots a try. You won't be disappointed!
