SIMPLE CARROTS AND CELERY SIDE DISH

Simple Carrots and Celery Side Dish image

This is a super simple and tasty side dish. I think celery is an underused vegetable and this is a nice way of using it. The vegetable stock can be a little bit salty so if you don't use a low sodium variety this is best served with a meal that doesn't otherwise have a lot of salt.

Time 17m

Yield 2 serving(s)

Number Of Ingredients 3

2 cups vegetable stock
4 ounces celery, chopped
7 ounces carrots, chopped to medium thickness

Steps:

  • Put stock in medium sized pot and bring to a rapid boil.
  • Add the carrots and the celery to the pot.
  • Boil for about 10 to 12 minutes or until the carrots are tender.
  • Scoop out the veggies and serve. Most of the liquid will be boiled away so you can simple discard that but if I am serving plain rice I will often spoon it over the top since it is tasty and there isn't much of it.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 13

1 whole chicken (3 1/2 to 4 pounds), rinsed, trimmed of excess fat, and patted dry
1 garlic bulb, halved horizontally
2 sprigs fresh tarragon, plus 1 tablespoon chopped tarragon leaves
3 tablespoons unsalted butter, softened
1 shallot, finely chopped
Coarse salt and freshly ground pepper
2 lemons (1 halved, 1 thinly sliced)
5 red onions (2 large and 3 small), peeled
4 long, thin carrots, peeled (halved or quartered lengthwise if large)
3 stalks celery
6 small red potatoes, halved (or 3 russet potatoes, cut into thirds)
1/2 cup dry white wine
1/2 cup homemade or low-sodium store-bought chicken stock

Steps:

  • Preheat oven to 400 degrees. Rub chicken inside and out with one garlic half. Place both garlic halves and the tarragon sprigs in cavity. Stir together butter, shallot, chopped tarragon. Season with salt and freshly ground pepper. Loosen skin of chicken near cavity with hands; spread butter mixture under skin all over flesh.
  • Squeeze juice from lemon halves over chicken; place in cavity. Season with salt and freshly ground pepper.
  • Halve the large onions horizontally at an angle. Arrange in the middle of a 9-by-13-inch roasting pan to form a square. Position halves so that the slanted ends of each pair face each other, inward, and almost touch. Place chicken, breast side up, on onion "rack."
  • Quarter the small onions; arrange with carrots, celery, and potatoes around bird. Tuck lemon slices between wings and breast, and legs and breast. Pour wine and stock over vegetables.
  • Roast chicken and vegetables, basting 2 or 3 times with pan juices, until an instant-read thermometer inserted into thickest part of chicken thigh registers 165 degrees and juices run clear, 1 to 1 1/2 hours.
  • Remove pan from oven, and let chicken stand 10 minutes. Carve chicken. Arrange chicken and roasted vegetables (including rack onions) on a platter. Spoon pan juices over meat.

STEAMED POTATOES AND CARROTS WITH TARRAGON BUTTER

Steamed Potatoes and Carrots with Tarragon Butter image

Steaming these vegetables keeps their earthy flavors intact and results in a just-right level of tenderness. Tarragon butter coats the finished side dish.

Provided by Martha Stewart

Categories     Food & Cooking     Healthy Recipes     Gluten-Free Recipes

Number Of Ingredients 7

1/4 cup (1/2 stick) unsalted butter, softened
2 teaspoons finely chopped fresh flat-leaf parsley
2 teaspoons finely chopped fresh chives
2 teaspoons finely chopped fresh tarragon
Coarse salt and freshly ground pepper
1 pound very small Yukon gold or other small waxy potatoes
1 bunch (about 6 medium) carrots, peeled

Steps:

  • Stir together butter, parsley, chives, and tarragon in a small bowl until smooth. Season with salt and pepper. Butter can be refrigerated, covered, up to 2 days.
  • Fill a medium pot fitted with a steamer insert with 2 to 3 inches water. Bring water to a simmer over medium-high heat. Add potatoes to insert; sprinkle with 3/4 teaspoon salt, and cover. Reduce heat to medium-low. Steam until potatoes are just tender, about 15 minutes. Add carrots; cover, and steam until vegetables are tender when pierced with a knife, about 5 minutes.
  • Transfer to a serving platter. Spoon about 2 tablespoons tarragon butter over vegetables. Serve immediately with remaining butter on the side.

Tips:

  • Choose fresh, crisp carrots and celery: This will ensure the best flavor and texture.
  • Cut the carrots and celery into uniform pieces: This will help them cook evenly.
  • Don't overcrowd the pan: If you do, the vegetables will steam instead of roast.
  • Roast the vegetables at a high temperature: This will help them caramelize and develop a delicious flavor.
  • Season the vegetables well: Salt, pepper, and garlic powder are all good choices.
  • Add a splash of acidity: This could be lemon juice, vinegar, or even white wine.
  • Garnish with fresh herbs: Tarragon, parsley, or chives are all good choices.

Conclusion:

This recipe for roasted carrots and celery with tarragon is a simple but delicious side dish that can be enjoyed year-round. The carrots and celery are roasted until tender and caramelized, and the tarragon adds a bright, herbaceous flavor. This dish is perfect for a weeknight meal or a special occasion.
