6 medium carrots, peeled and sliced on a bias
1 1/2 tbsp olive oil
1 medium shallot, diced finely
2 large cloves minced garlic
1/3 cup unsalted pistachios, chopped
1/3 cup golden raisins or sultana raisins
3 tbsp cilantro, chopped
3 tbsp parsley, chopped
1/2 cup olive oil
2 tbsp lemon juice
1 tbsp agave or date syrup
1 tsp smoked paprika
3/4 tsp turmeric
3/4 tsp salt
1/2 tsp cumin
1/4 tsp cinnamon
1/4 tsp cayenne

Steps:

  • Preheat oven to 375 F.
  • Rinse and sort lentils, then cook lentils according to package directions. Make sure to add a generous pinch of salt to the cooking liquid.

Before long, though, they'll ask to have the bowl passed back down so they can take a "real" helping! We live on a small livestock farm-raising goats, rabbits and chickens-and I've found this salad's an ideal dish to take out to the field. My husband and I have four children, ranging in age from 6 years to 6 months.

1 cup diced carrots

DRESSING:

1 cup brown, green or black lentils, rinsed
3 cups water
1/4 cup extra virgin olive oil
1 onion, halved lengthwise, then sliced thin across the grain
1 teaspoon coriander seeds
4 garlic cloves, minced
1 1/2 pounds carrots, peeled and sliced thin (about 4 cups sliced)
1 tablespoon tomato paste dissolved in 1 cup water
1 teaspoon sugar
Salt to taste
1/2 cup chopped fresh mint

Steps:

  • Combine the lentils with 3 cups water in a saucepan, and bring to a boil. Reduce the heat, cover and simmer for 15 minutes. Set a strainer over a bowl, and drain.
  • Heat the oil over medium heat in a heavy casserole or skillet. Add the onion and coriander seeds. Cook, stirring, until the onion is tender, about five minutes. Add the garlic and carrots and salt to taste. Cook, stirring, for two to three minutes until the carrots begin to soften. Stir in the dissolved tomato paste, sugar and lentils. Add 1 to 1 1/2 cups of the cooking water from the lentils (enough to cover the lentils), salt to taste and half the mint. Bring to a simmer, and simmer uncovered for 15 to 20 minutes until the lentils are tender and much of the liquid has evaporated. Taste and adjust salt. Remove from the heat, sprinkle on the remaining mint and serve, or allow to cool and serve at room temperature with cooked whole grains, like bulgur or quinoa.

1/2 yellow onion
2 cloves garlic
2 teaspoons grated peeled fresh ginger (from a 3/4-inch piece)
1 teaspoon Dijon mustard
3 tablespoons white-wine vinegar
Coarse salt and freshly ground pepper
1/2 cup extra-virgin olive oil
4 carrots, peeled and shaved into thin strips with a peeler
1 cup packed fresh flat-leaf parsley leaves
