¼ cup yellow onion, finely chopped
1 cup brown rice, cooked
½ teaspoon dried thyme
½ teaspoon salt
2 tablespoons water
1 cup carrot, chopped
½ cup celery, chopped

Steps:

  • Preheat oven to 375˚F (190˚C).
  • In the bowl of a food processor, add sunflower seeds. Process until finely ground.
  • Add onion, brown rice, thyme, salt, and water and process until combined.
  • Add carrot and celery and pulse several times to combine.
  • Using a ½ cup (120 ml) measuring cup, portion 5 patties from the mixture. Place onto a lightly greased parchment-lined sheet pan.
  • Bake for 30 minutes, or until firm and browned, flipping over halfway through.
  • Serve burgers with your favorite fixins.

1 cup milk
1 ¾ ounces fresh yeast
1 egg
3 ⅓ tablespoons olive oil
1 ½ tablespoons white sugar
1 teaspoon salt
4 ⅓ cups all-purpose flour, or as needed
2 small carrots, grated
5 ½ tablespoons sunflower seeds
1 tablespoon milk, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Warm 1 cup milk in a large saucepan over low heat until it reaches room temperature, 3 to 5 minutes. Remove from heat and mix in yeast until dissolved. Mix in egg, olive oil, sugar, and salt.
  • Stir half of the flour into the saucepan. Add carrots and sunflower seeds. Stir in remaining flour until dough is sticky. Cover and let rise in a warm place for 30 minutes.

2 grated carrots, approximately 2 1/2 cups
2 eggs, beaten
2 tablespoons cornmeal
1/2 cup sunflower seeds
1 teaspoon dill weed
1 onion, grated
1/4 teaspoon celery salt
1/2 cup parsley
2 tablespoons olive oil

Steps:

  • Combine all ingredients and mix well.
  • Chill for 1 hour if possible.
  • Heat a griddle or large skillet, non-stick preferably, over medium heat.

2 cups shredded carrots
2 eggs
1/4 teaspoon Worcestershire sauce
1 tablespoon finely chopped onion
2 tablespoons seasoned dry bread crumbs
1/2 teaspoon pepper
4 -6 tablespoons Butter Flavor Crisco

Steps:

  • In medium mixing bowl, combine carrots, eggs, milk, Worcestershire sauce, onion, bread crumbs, salt and pepper. Mix thoroughly.
  • In a large skillet, melt 2 to 3 tablespoons butter flavor Crisco over medium heat. For each patty, drop about 1/3 cup shredded carrot mixture into the pan. Flatten slightly with spatula. Cook 3 to 4 minutes or until first side is golden brown. Turn and cook for another 2 to 3 minutes or until other side is golden brown. Add remaining butter flavor Crisco to pan as needed . Drain on paper towels.
