GRATED CARROT SALAD WITH DATES AND ORANGES

Grated Carrot Salad With Dates and Oranges image

The influences here are Moroccan. The orange juice brings out the sweetness of the carrots. The juices combine in a delectable way, the salad sweetened all the more by the dates and cinnamon.

Provided by Martha Rose Shulman

Categories     brunch, dinner, lunch, quick, salads and dressings, appetizer

Time 10m

Yield Serves 4

Number Of Ingredients 8

1 pound carrots, grated on the medium blade of your grater
8 dates, pitted and quartered lengthwise
2 tablespoons fresh lemon juice
1/4 cup fresh orange juice
Salt to taste
1/4 teaspoon ground cinnamon, plus additional for sprinkling
2 tablespoons olive oil
2 to 3 oranges (as needed)

Steps:

  • In a large bowl combine the carrots and dates.
  • Whisk together the lemon juice, orange juice, salt, cinnamon and olive oil. Toss with the carrots.
  • Remove the peel and pith from one of the oranges. Cut the sections away from between the membranes, holding the orange above the bowl to catch juice. Cut the orange sections into halves or thirds, depending on the size, and toss with the carrots. Transfer to a platter or a wide bowl.
  • Slice the remaining orange or oranges into thin rounds. Cut the rounds in half, and arrange in an overlapping ring around the carrots. Sprinkle a little more cinnamon over the carrots and oranges, and serve.

CARROT AND RED ONION SALAD

Carrot and Red Onion Salad image

This simple and refreshing salad is a quick side to just about any protein--poultry, beef, fish or plant-based. By varying the herbs and acid (swap the lemon juice for lime or wine, cider or rice vinegar) and adjusting the spice level, you can make this salad suit any meal. Leftovers will keep for a day or two in the refrigerator and are great tucked into a sandwich or tossed into a leafy green salad.

Provided by Food Network

Categories     side-dish

Time 10m

Yield 4 servings

Number Of Ingredients 7

2 large carrots, coarsely grated
1 small red onion, thinly sliced
3 tablespoons extra-virgin olive oil
Juice of 1/2 lemon
Kosher salt
Pinch crushed red pepper flakes
1 cup fresh cilantro leaves.

Steps:

  • Put the carrots and onion in a medium bowl. Drizzle the olive oil and lemon juice over the vegetables. Season with salt and a pinch of red pepper flakes. Toss well to coat with the dressing. Add the cilantro and toss just to combine. Serve immediately or refrigerate in an airtight container for up to 3 days.

Tips:

  • Choose the right carrots: Look for fresh, firm carrots with a deep orange color. Avoid carrots that are limp or have blemishes.
  • Shred the carrots finely: This will help them absorb the dressing better and make the salad easier to eat.
  • Use a variety of oranges: The combination of sweet and tart oranges adds a nice balance of flavors to the salad.
  • Don't skimp on the olives and green onions: These ingredients add a salty, savory flavor that complements the sweetness of the carrots and oranges.
  • Make the dressing ahead of time: This will give the flavors a chance to meld together and taste even better.
  • Adjust the amount of dressing to your liking: Some people like their salads more dressed than others. Start with a little bit of dressing and add more to taste.
  • Serve the salad immediately: This salad is best when served fresh. However, it can be made ahead of time and stored in the refrigerator for up to 24 hours.

Conclusion:

This carrot salad is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and delicious salad, give this carrot salad a try. You won't be disappointed!
