Yield 12 to 18 Muffins

Number Of Ingredients 13

1 Cup Buttermilk
1 Cup Quick Cooking Oats
1 Beaten Egg
1/3 C Melted Butter
1 Teaspoon Vanilla
2 Tablespoons Orange Juice (or 1 Tsp Orange Extract)
1 C Whole Wheat Flour
1 Teaspoon Baking Soda
2 Teaspoons Baking Powder
1 Teaspoon Salt
1/2 C Brown Sugar
1 Cup Finely Grated Carrot
Grated rind of 1 Orange

  • Add 1/2 teaspoon of ground cinnamon or nutmeg to the batter for a warm and spicy flavor.
  • For a nutty flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
  • For a moist muffin, use 1/2 cup of sour cream or yogurt instead of milk.
  • To make gluten-free muffins, use 1 1/2 cups of gluten-free flour instead of all-purpose flour.
