CARROT OATMEAL COOKIES

Carrot Oatmeal Cookies image

I found basis of this recipe in one of my MIL's magazines. Since I have my husband on a diet restricting meat, dairy, processed sugars, and white flour, I am trying to find creative ways to help satisfy his sweet tooth. These aren't very sweet but bake up nicely and "hit the spot". You could also add 1 cup of chocolate chips if you want it a little sweeter. What a wonderful way to eat your carrots!!!

HEALTHIER CARROT OATMEAL COOKIES

Healthier Carrot Oatmeal Cookies image

This makes a relatively healthy, cake-like cookie that is a bit like a mix between carrot cake and oatmeal cookies. I adjusted a few different recipes to use less sugar and more oats and carrots so that I don't feel too bad eating these for breakfast (which I can't resist)!

Provided by CAMILLEELISE

Categories     100+ Breakfast and Brunch Recipes

Time 35m

Yield 24

Number Of Ingredients 13

1 cup honey
⅔ cup coconut oil
2 cups grated carrots
2 eggs
1 cup all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon baking soda
¼ teaspoon salt
3 cups quick-cooking oats
1 cup raisins
½ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 cookie sheets with parchment paper.
  • Combine honey and coconut oil in a large bowl; beat with an electric mixer until creamy. Add carrots and eggs and mix well.
  • Sift flour, baking powder, cinnamon, nutmeg, baking soda, and salt together in a large bowl. Add to the wet ingredients and mix until well combined. Mix in oats, raisins, and walnuts until well distributed.
  • Drop large spoonfuls of dough 2 inches apart onto the prepared cookie sheets and flatten with a fork, if desired.
  • Bake in the preheated oven until tops are a golden color, about 15 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

Tips:

  • Use fresh carrots. Fresh carrots are sweeter and have a better flavor than carrots that have been stored for a long time.
  • Grate the carrots finely. This will help them distribute evenly throughout the cookies and prevent them from becoming too crunchy.
  • Use a combination of oats and flour. This will give the cookies a chewy texture and prevent them from becoming too dry.
  • Add raisins and walnuts for extra flavor and texture. You can also add other dried fruits or nuts, such as cranberries, cherries, or pecans.
  • Don't overmix the dough. Overmixing the dough will make the cookies tough.
  • Bake the cookies until they are golden brown. This will ensure that they are cooked through.

Conclusion:

Carrot oatmeal raisin walnut mega cookies are a delicious and healthy snack that is perfect for breakfast, lunch, or a dessert. They are packed with nutrients and fiber, and they are also a good source of antioxidants. These cookies are easy to make and can be customized to your liking. So next time you are looking for a healthy and satisfying snack, give these carrot oatmeal raisin walnut mega cookies a try!
