**Carrot Haters Casserole: A Culinary Delight for the Carrot-Averse**
For those who harbor a deep-seated aversion to carrots, the Carrot Haters Casserole emerges as an unexpected culinary hero. This ingenious dish artfully conceals the presence of carrots within a symphony of delectable flavors, transforming them into an undetectable ingredient that seamlessly blends into a harmonious ensemble of textures and tastes.
The Carrot Haters Casserole proudly stands as a collection of three distinct recipes, each meticulously crafted to cater to diverse dietary preferences and culinary inclinations. The classic version, a paragon of simplicity, relies on pantry staples to weave a tapestry of comforting flavors. For those seeking a gluten-free alternative, a dedicated recipe awaits, ensuring that dietary restrictions do not hinder the enjoyment of this culinary masterpiece. And for those who delight in the richness of dairy, a third recipe beckons, inviting them to indulge in a creamy, decadent rendition of the Carrot Haters Casserole.
Each recipe embarks on a culinary journey that begins with the humble carrot, carefully peeled and diced into minuscule pieces. A mirepoix of onions, celery, and garlic forms the aromatic foundation of the dish, releasing their savory essence as they gently sauté in butter.
Next, a choice of ground beef or turkey joins the aromatic trinity, adding a hearty depth of flavor. Simmered in a velvety tomato sauce, seasoned with a medley of herbs and spices, the meat becomes a succulent complement to the carrots. A creamy sauce, prepared with either milk or dairy-free alternatives, envelops the casserole in a velvety embrace, lending a richness that balances the tangy tomato sauce.
As the casserole bakes in the oven, a golden-brown crust forms on its surface, a tantalizing spectacle that beckons one to partake in its culinary delights. The aroma that permeates the air is a symphony of savory scents, piquing the senses and heightening anticipation. Upon serving, a sprinkle of fresh parsley adds a vibrant pop of color and a touch of herbaceousness, completing the presentation of this culinary masterpiece.
Whether you are a carrot enthusiast or a self-proclaimed carrot hater, the Carrot Haters Casserole promises a culinary experience that will challenge your preconceptions and redefine your perception of this oft-maligned vegetable. Prepare to be amazed as you discover the hidden depths of flavor that carrots can impart when skillfully incorporated into a harmonious blend of ingredients.

Steps:
- Preheat oven to 350*F Grease a 9 x 13 casserole dish and set aside. Steam carrots until 1/2 way cooked. You want them to be soft enough to bite but still with a bit of a crunch. They'll finish cooking in the oven. As carrots are steaming, in a saucepan combine butter and onion. Cook until onions are soft and translucent. Add flour, salt, mustard and pepper and mix well to create a paste. Slowly add 1/4 cup of milk at a time whisking continually until all the milk has been added to pan. You are making a basic roux. The mixture will thicken quite a bit at first but slowly thin out. If you add all the milk at once you'll have a clumpy mess, so only add 1/4 cup at a time, whisking well. Cook for 5 minutes then turn off burner and add cheese. Mix well until cheese is melted and combined. When carrots are cooked half way, place carrots on the bottom of the casserole dish. Pour cheese mixture on top of carrots ensuring to cover carrots completely. Sprinkle bread crumbs or crushed Ritz crackers on top of sauce and bake for 25 minutes. Remove from oven and serve immediately.
