CARROT COOKIES

We love these carrot cookies either plain or with butter cream frosting flavored with a little lemon zest and lemon juice, or try 1/2 recipe of Recipe #26165. These cookies have a nice cake-like texture--nice and soft. Note: Made these again today and thought I'd better add a comment. I made them about tablespoon sized and they cooked in 8 minutes. They don't need to brown on bottom--just cook until they are nice and firm.

Tips:

- **Freshly grated carrots:** Using freshly grated carrots ensures the cookies have a vibrant color and a sweet, earthy flavor. Avoid pre-packaged shredded carrots, as they tend to be dry and lack flavor. - **Creaming the butter and sugar:** Creaming the butter and sugar until light and fluffy is essential for creating a chewy, tender cookie. This process incorporates air into the mixture, which helps the cookies rise and spread during baking. - **Chilling the dough:** Chilling the dough for at least 30 minutes before baking helps prevent the cookies from spreading too much in the oven. This results in a thicker, chewier cookie with a more defined shape. - **Using a cookie scoop:** Using a cookie scoop to portion the dough ensures that the cookies are all uniform in size and shape. This also helps to prevent the cookies from spreading too much in the oven. - **Baking the cookies at a high temperature:** Baking the cookies at a high temperature for a short amount of time helps to create a chewy interior and a slightly crispy exterior.

Conclusion:

Carrot cookies are a delicious and nutritious snack that can be enjoyed by people of all ages. They are easy to make and can be customized with a variety of add-ins, such as raisins, nuts, or chocolate chips. Whether you are looking for a healthy snack or a sweet treat, carrot cookies are a great option.
