1 c shortening
3/4 c sugar
2 large eggs
1 c mashed cooked carrots
2 c sifted flour
2 tsp baking powder
1/2 tsp salt
3/4 c shredded coconut

Steps:

  • 1. Mix well together : shortening , sugar , eggs and mashed carrots.
  • 2. Sift together : flour , baking powder and salt ; Mix into carrot mixture.
  • 3. Add coconut to mixture.
  • 4. Drop by teaspoonfuls onto a greased cookie sheet.

1 cup shortening (part margarine)
2 large eggs
2 cups flour
