1 tablespoon olive oil
2 large onions, chopped
5 medium carrots, chopped
2 cloves garlic, chopped
1 fresh red chile pepper, chopped
3 (28 ounce) cans roma tomatoes, with juice
1 cup vegetable stock
1 bunch chopped fresh cilantro
2 tablespoons balsamic vinegar
1 tablespoon white sugar
1 tablespoon brown sauce
1 tablespoon Worcestershire sauce
salt and pepper to taste
1 cup heavy cream

Steps:

1 lb carrot, peeled and chopped
2 tablespoons olive oil
1 small onion, finely chopped
1 clove garlic, minced
1 teaspoon coriander seed, crushed
1 teaspoon ground cilantro
3 cups vegetable stock
salt and pepper

Steps:

  • Heat oil in large pan, add onion, garlic and carrots.
  • Cook gently for 10 minutes.
  • Stir in crushed and ground cilantro and cook for 1 minute.
  • Add the stock, bring to a boil, cover and simmer for 15 minutes (or until the carrots are tender).

1 lb baby carrots
1/2 medium onion, chopped
1 tablespoon curry paste (hot medium or mild)
2 tablespoons flour
4 cups vegetable stock
