CARROT CAKE (GLUTEN-FREE, CASEIN/DAIRY-FREE)

Carrot Cake (Gluten-Free, Casein/Dairy-Free) image

A delicious carrot cake that is free of gluten and casein, but also lower in sugar and fat than most recipes. Can be made vegan with egg-replacer instead of eggs. Top with your favourite icing, or a sprinking of icing sugar. I often use more pineapple, and mix it with cinnamon and raisins, and make a warm glaze before serving. Simply double the recipe for a two-tiered version.

This is an adaptation of my Grandmother's recipe. She was an incredible cook. At the risk of becoming a heretic amongst my family, I have "de-gluten-ized" it. I think she would have been proud.

Tips:

  • Choose the Right Gluten-Free Flour: Opt for a blend that contains a variety of flours, such as almond, coconut, and tapioca, to ensure a moist and flavorful cake.
  • Use Fresh Carrots: Freshly grated carrots impart a vibrant color and a sweet, earthy flavor to the cake.
  • Cream the Butter and Sugar Thoroughly: This step incorporates air into the mixture, resulting in a light and fluffy texture.
  • Add the Dry Ingredients Gradually: Slowly incorporate the dry ingredients to prevent overmixing and a dense cake.
  • Do Not Overmix the Batter: Overmixing can lead to a tough, dry cake. Mix just until the ingredients are combined.
  • Bake the Cake Properly: Bake the cake in a preheated oven and avoid opening the oven door during baking to prevent the cake from sinking.
  • Cool the Cake Completely: Allow the cake to cool completely before frosting to prevent the frosting from melting.

Conclusion:

This gluten-free, casein-free, and dairy-free carrot cake recipe offers a delicious and wholesome treat that caters to various dietary restrictions. By following the tips provided, you can create a moist, flavorful, and allergy-friendly cake that everyone can enjoy. Experiment with different frosting options, such as a simple cream cheese frosting or a decadent chocolate ganache, to further customize this delightful dessert.
