Time 4h3m

Yield 10 serving(s)

Number Of Ingredients 8

1 (18 1/4 ounce) box spice cake mix
1 (3 1/2 ounce) box instant butterscotch pudding mix
1 cup water
2 cups shredded carrots
3/4 cup canola oil
4 eggs
1 (8 ounce) can crushed pineapple
1 cup sour cream

Steps:

  • Spray a 5-quart slow cooker with butter flavored cooking spray. Combine all ingredients in large mixing bowl. Beat with electric mixer on medium speed for 2 minutes. Transfer to slow cooker. Place a paper towl over top of slow cooker. Cover and cook on LOW for 4 1/2 to 6 hours.
  • The paper towl absorbs the moisture and does not allow the water to drop onto the cake.

Tips:

  • Use fresh carrots. Fresh carrots will give your cake a more vibrant flavor and color.
  • Grate the carrots finely. This will help them to blend into the cake batter more easily.
  • Don't overmix the batter. Overmixing can make the cake tough.
  • Grease and flour the crock pot insert before adding the batter. This will help to prevent the cake from sticking.
  • Cook the cake on low for 4-6 hours, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting it.
  • Serve the cake with your favorite frosting. Cream cheese frosting is a classic choice, but you can also try a chocolate ganache or a maple glaze.
