CHEESY BROCCOLI-CARROT CASSEROLE

Categories     Side Casseroles

Number Of Ingredients 11

10 oz broccoli, frozen
1/4 c onion, chopped
1 can(s) cream of chicken soup
1/2 c sour cream
1 c cheddar cheese
1 c carrots, shredded
1 Tbsp all purpose flour
1/4 tsp salt
1/4 tsp pepper
2 Tbsp butter, melted
3/4 c stuffing mix, herb-seasoned

Steps:

  • 1. In a saucepan cook chopped broccoli and chopped onion in a small amount of boiling water for 5 minutes. Drain and set aside.
  • 2. In a 1 1/2 quart casserole combine soup and sour cream. Stir in shredded carrots, flour, salt and pepper.
  • 3. Fold in drained broccoli-onion mixture and cheese.
  • 4. Combine stuffing mix and butter, sprinkle over vegetables.
  • 5. Bake at 350 for 25-30 minutes or until heated.

Tips:

  • Use fresh vegetables. Fresh carrots and broccoli have the best flavor and texture.
  • Cut the vegetables into even-sized pieces. This will help them cook evenly.
  • Don't overcook the vegetables. Overcooked vegetables will become mushy and lose their flavor.
  • Use a sharp knife to chop the onion. A dull knife will crush the onion, releasing its bitter juices.
  • Use a non-stick skillet to cook the onion. This will prevent it from sticking and burning.
  • Add the garlic and cook for 1 minute. This will release the garlic's flavor and aroma.
  • Stir in the flour and cook for 1 minute. This will help thicken the sauce.
  • Gradually whisk in the milk. This will prevent the sauce from curdling.
  • Bring the sauce to a simmer and cook for 5 minutes. This will allow the flavors to meld.
  • Season the sauce with salt, pepper, and nutmeg. Add more seasonings to taste.
  • Stir in the cooked vegetables and chicken. Make sure the vegetables and chicken are evenly coated with the sauce.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Sprinkle the bread crumbs and Parmesan cheese on top.
  • Bake for 25-30 minutes, or until the casserole is golden brown and bubbly.
  • Let the casserole cool for 10 minutes before serving.

Conclusion:

Carrot Broccoli Casserole is a delicious and comforting dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste. For a vegetarian version, simply omit the chicken. For a heartier casserole, add some cooked rice or quinoa. Serve Carrot Broccoli Casserole with a side salad or roasted vegetables for a complete meal.
