1 teaspoon baking soda

1 cup unsalted butter, melted, plus softened butter for greasing
2 cups grated carrots (from 2 large peeled carrots)
1 (8-oz.) can crushed pineapple in juice, drained
1 cup unsweetened shredded coconut
2 teaspoons vanilla extract
½ cup plus 2 Tbsp. whole buttermilk, divided
1 cup chopped toasted pecans
1 cup powdered sugar

Steps:
