I like to make this soup as a starter when I have guests. It can easily be made in advance, but only add creme fraiche, orange juice, and orange zest right before serving.

CARROT AND ORANGE SOUP

A flavoursome twist of a classic soup.

Yield Serves 4

Number Of Ingredients 0

Steps:

  • Heat the oil and gently sauté the onions, until soft and golden. Add the carrots and fry for a further 1-2 minutes.
  • Combine the stock, orange juice, ground coriander, cinnamon. Stir in the wet ingredients and cover. Simmer for 40-50 minutes or until the carrots are tender.
  • Liquidize the ingredients to your desired consistency. Season to taste and garnish with the coriander leaf.

Tips:

  • Choose the right carrots: For the best flavor, use fresh, young carrots. Look for carrots that are brightly colored and free of blemishes.
  • Roast the carrots: Roasting the carrots intensifies their sweetness and flavor. Be sure to toss the carrots with olive oil and salt before roasting to help them caramelize.
  • Use a good quality orange juice: The orange juice is a key ingredient in this soup, so be sure to use a good quality juice. Freshly squeezed orange juice is ideal, but you can also use a high-quality store-bought juice.
  • Don't overcook the soup: The soup should be cooked just until the carrots are tender. Overcooking the soup will make the carrots mushy and the soup will lose its bright orange color.
  • Serve the soup with a garnish: A dollop of crème fraîche, a sprinkle of chopped fresh herbs, or a drizzle of olive oil are all great ways to garnish this soup.

Conclusion:

This carrot and orange soup is a delicious and easy-to-make soup that is perfect for a winter meal. The soup is creamy, flavorful, and packed with nutrients. It is also a great way to use up leftover carrots. So next time you have some extra carrots on hand, be sure to give this soup a try.
