Yield Makes 4 servings

Number Of Ingredients 4

4 bunches baby carrots with green tops attached, tops trimmed to 1 1/2 inches, carrots peeled (about 24)
1 1/4 cups fresh orange juice
1 teaspoon ground cumin
2 tablespoons (1/4 stick) butter

Steps:

  • Place carrots in pot large enough to hold carrots in double layer. Pour orange juice over; add cumin. Sprinkle with salt and freshly ground black pepper. Bring to boil. Reduce heat to medium, cover, and simmer until carrots are just tender, about 10 minutes. Transfer carrots to plate. Boil liquid in pot until slightly reduced and syrupy, about 2 minutes. Stir in butter. Return carrots to pot and simmer just until heated through, about 2 minutes. Season carrots to taste with salt and pepper.

Tips:

  • Choose the right carrots: Use fresh, organic carrots for the best flavor and nutritional value.
  • Peel and cut the carrots evenly: This will help them cook evenly.
  • Use a good quality orange juice: Freshly squeezed orange juice is best, but you can also use a high-quality store-bought brand.
  • Don't overcook the carrots: They should be tender but still have a slight crunch.
  • Season to taste: Add a pinch of salt and pepper to taste.
  • Serve immediately: Carrot and orange juice is best enjoyed fresh.

Conclusion:

Carrot and orange juice is a delicious and nutritious drink that is perfect for any time of day. It is packed with vitamins, minerals, and antioxidants that can help boost your immune system, improve your skin health, and protect your cells from damage. Carrot and orange juice is also a good source of fiber, which can help keep you feeling full and satisfied. So next time you are looking for a healthy and refreshing drink, reach for a glass of carrot and orange juice.
