Steps:

  • Toss 1 1/2 pounds peeled small carrots with 1 tablespoon olive oil and a pinch each of salt and pepper. Grill over medium heat, covered, turning, until tender, 12 to 15 minutes. Mix 2 tablespoons melted butter, 1 tablespoon harissa, 2 teaspoons white wine vinegar, 1/2 teaspoon ground coriander and a pinch each of salt and pepper; toss with the carrots. Top with torn mint and flaky salt. Serve with lemon wedges.

Tips:

  • Choose the right carrots: Look for fresh, firm carrots with a deep orange color. Avoid carrots that are limp or have blemishes.
  • Roast the carrots: Roasting the carrots intensifies their flavor and sweetness. Toss the carrots with olive oil, salt, and pepper, and roast them in a preheated oven at 425°F (220°C) for 20-25 minutes, or until they are tender and slightly browned.
  • Use a good quality harissa paste: Harissa is a North African chili paste that adds a spicy, smoky flavor to the soup. Look for a harissa paste that is made with fresh, flavorful chili peppers.
  • Don't overcook the soup: The soup should be simmered gently for 15-20 minutes, or until the carrots are completely tender. Overcooking the soup will make the carrots mushy.
  • Season the soup to taste: Once the soup is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or harissa paste.

Conclusion:

Carrot and harissa puree is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. The combination of sweet carrots and spicy harissa paste creates a flavorful soup that is sure to please everyone at the table. Serve the soup with a dollop of yogurt or sour cream, and enjoy!
