CARRABBA'S CAVATAPPI AMATRICIANA (SIDE DISH PASTA)

Carrabba's Cavatappi Amatriciana (Side Dish Pasta) image

This is an approximate verision of Carrabba's. This is served in the restaurant as a side dish but would be just fine as a main dish when pancetta is added in. Cavatappi pasta is a short tubed corkscrew or S-shaped pasta. It can be hard to find but I was able to find it called "Twists" by the pasta brand DaVinci (blue bag).

Categories     Pasta Sides

Time 30m

Number Of Ingredients 10

4 oz cavatappi pasta or elbow macaroni
3/4 c onions, chopped
2 clove garlic, minced
1/4 tsp red pepper flakes
1/8 c olive oil
1/2 c dry white wine
14 oz can(s) petite diced tomatoes, with juice plus small amount water
salt and pepper, to taste
1 c shaved parmesan cheese plus some for reheating
(optional) pancetta

Steps:

  • 1. Boil pasta, drain. Set aside. Meanwhile, sauté onions, garlic and red pepper flakes in oil over medium heat til onions are soft.
  • 2. Add white wine and cook until nearly evaporated. Stir in tomatoes with their juice plus a little water (to clean out the can) till slightly thickened. ( 3 to 5 minutes)
  • 3. Taste and add salt and pepper to your liking.
  • 4. Add drained pasta, toss with cheese and pancetta, if using.

Tips:

  • Use high-quality ingredients for the best flavor. Fresh vegetables, flavorful cheese, and a good quality pasta will make a big difference.
  • Don't overcook the pasta. Cook it al dente, or slightly firm to the bite, to maintain its texture and prevent it from becoming mushy.
  • Save some of the pasta cooking water to add to the sauce. This will help to create a creamy, flavorful sauce that coats the pasta perfectly.
  • Add the cheese gradually to the sauce, stirring constantly until it is melted and smooth. This will prevent the cheese from clumping.
  • Season the sauce to taste with salt, pepper, and red pepper flakes. You can also add a touch of garlic powder or Italian seasoning for extra flavor.
  • Serve the pasta immediately, topped with additional cheese and fresh parsley or basil.

Conclusion:

Carrabba's Cavatappi Amatriciana is a delicious and easy-to-make side dish pasta that is perfect for any occasion. With its creamy, flavorful sauce, tender pasta, and crispy pancetta, this dish is sure to be a hit with everyone at the table.
