CARMELITA BARS
Steps:
- Preheat oven to 350º. Line 9 x 13 inch pan with nonstick foil. In large bowl, combine flour, oatmeal, sugar, soda and salt. Add melted butter and mix till well combined. Reserve half the crumbs, about 3 cups. Press remaining crumbs into bottom of pan. In a small microwave safe bowl, combine caramels and half and half. Heat for 4-6 minutes on half power, stirring a couple times during the melting process, until caramels are melted and mixture is smooth. Sprinkle crust with chocolate chips. Drizzle with melted caramel mixture and top with reserved crumbs. Bake for 20-25 minutes or till golden brown. Cool at least one hour before cutting.
Tips:
- Make sure the condensed milk is at room temperature before adding it to the egg yolk mixture. This will help prevent the mixture from curdling.
- When making the caramel topping, be careful not to overcook it. The caramel should be a light golden brown color.
- If you don't have a kitchen torch, you can caramelize the sugar by placing the baking dish under the broiler for a few minutes. Just be sure to watch it closely so that the sugar doesn't burn.
- Carmelita bars can be stored in an airtight container at room temperature for up to 3 days.
Conclusion:
Carmelita bars are a delicious and easy-to-make dessert. They're perfect for any occasion, from potlucks to holiday gatherings. With their rich, buttery crust, gooey caramel filling, and crunchy coconut topping, these bars are sure to be a hit with everyone who tries them.
