1 small red bell pepper, chopped
1 jalapeno pepper, seeded and chopped
2 Tbsp red onion, finely chopped
2 Tbsp fresh cilantro, minced
1 Tbsp fresh lime juice
1 clove garlic, minced
1/8 tsp salt
1/8 tsp black pepper
PORK:
2 Tbsp olive oil
1 Tbsp brown sugar
1 Tbsp caribbean jerk seasoning
1 tsp dried thyme
1 tsp dried rosemary, crushed
1/2 tsp seasoning salt
1 lb pork tenderloin

Steps:

  • 1. In a small bowl, combine the first 9 ingredients; set aside.
  • 2. In another small bowl, combine the oil, brown sugar, jerk seasoning, thyme, rosemary and seasoned salt. Rub over the pork.
  • 3. Grill, covered, over medium heat for 9 to 11 minutes on each side or until a thermometer reads 145°. Let stand for 5 minutes before slicing.
