CARIBBEAN FISH WITH MANGO SALSA

Caribbean Fish With Mango Salsa image

Now for something completely different, how about a little Caribbean/Creole feel? This can be done with fish or with scallops and will wake up the little taste buds. Please forgive me, I am not a real recipe follower, and I change it around all the time. Hope this works for you, love to hear about it. I never wrote it as a recipe, sort of a seat of the pants guy. One item to complete it that I may add is Zatarain's Caribbean Rice®, and in this I add 1/2 red bell pepper and 1/4 cup of fresh pineapple.

  • Heat your broiler to high. Line a large flameproof baking dish or rimmed flameproof baking sheet with a double layer of aluminum foil and grease the foil with some olive oil or nonstick cooking spray.
  • Place the salmon in the prepared baking dish and tuck about 2 inches of the tail-end under the fish, so you have a somewhat uniform shape. Pour the barbecue sauce over the salmon and cook it under the broiler until the sauce caramelizes and chars around the edges and the salmon is firm and flakes easily, 8 to 12 minutes for rare (the salmon will still be pink in the middle) or 12 to 15 minutes for well done (the salmon will be cooked throughout).
  • Spread the salsa on the serving platter and carefully lift the salmon out of the baking dish and arrange it on top of the salsa (use 2 large spatulas to transfer it). Squeeze a few lime wedges over the fish and serve with additional lime wedges on the side.

It works best if you follow the directions and freeze the chicken as directed; I have tried making it all on the same day and it is not the same.

Time 10m

Yield 1 salsa, 4-8 serving(s)

Number Of Ingredients 8

1 (15 ounce) can pineapple tidbits, drained
1 small red onions or 3 tablespoons green onions
1 cup chopped mango
1 cup chopped papaya
1/2 medium sweet red pepper
cilantro, to taste
salt, to taste
pepper, to taste

Steps:

  • Finely chop all ingredients. Starting with the pineapple, combine all ingredients. Season with salt and pepper. Add cilantro to taste.

Tips:

  • Choose ripe and flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your salsa, so make sure to choose ripe, red tomatoes that are free of blemishes.
  • Use fresh herbs and spices: Fresh herbs and spices will add a lot of flavor to your salsa. Be generous with the cilantro, cumin, and chili powder, and add a squeeze of lime juice for a refreshing touch.
  • Don't over-process the salsa: A chunky salsa is more flavorful and has a better texture than a smooth salsa. Pulse the ingredients in a food processor or blender just until they are combined, or chop them by hand for a more rustic result.
  • Chill the salsa before serving: Chilled salsa is more refreshing and flavorful, so make sure to chill it for at least 30 minutes before serving.
  • Serve with your favorite chips or vegetables: Caribbean salsa is delicious served with tortilla chips, vegetable chips, or even grilled shrimp or chicken.

Conclusion:

Caribbean salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. With its fresh, vibrant flavors, Caribbean salsa is a perfect way to brighten up your next meal.
