Categories     Rice

Time 28m

Yield 4 serving(s)

Number Of Ingredients 5

3 cups coconut milk
1 bay leaf (or 1 tsp. peeled and minced fresh garlic) (optional)
1 1/2 cups short-grain rice (or long-grain...particularly jasmine)
salt
1/2 cup cooked beans (moist kidney, pinto, pink or black beans)

Steps:

  • Combine coconut milk, bay leaf (or garlic) if you're using it, and rice. Bring to a boil over medium heat, stirring occasionally. Add some salt, lower heat to low and cover. Cook for 10 minutes. Stir occasionally to ensure it doesn't scorch.
  • Uncover. Cook, stirring over low heat, until rice is tender and mixture is creamy, about 15 minutes. At about the 10-minute mark, stir in beans. If liquid evaporates before rice is done, stir in water (about 1/2 cup at a time), and cook until done.

Time 40m

Yield 4

Number Of Ingredients 12

2 teaspoons unsalted butter
2 teaspoons minced fresh ginger
1 clove garlic, minced
1 (3 inch) cinnamon stick
1 cup uncooked jasmine rice
¾ cup water
¾ cup light coconut milk
1 teaspoon white sugar
½ teaspoon kosher salt
¼ teaspoon grated lime zest
⅛ teaspoon ground white pepper
¼ cup shredded unsweetened coconut, toasted

Steps:

  • Melt butter in saucepan over medium heat. Add ginger, garlic, and cinnamon stick, and sauté until fragrant, about 1 minute. Stir in rice, and sauté until rice grains are opaque, about 2 minutes. Add water, coconut milk, sugar, salt, lime zest, and white pepper and bring to a simmer. Stir once, cover, reduce heat to low, and simmer for 15 minutes.
  • Fluff rice with a fork, cover, and let rest for 5 minutes. Garnish with toasted coconut, if using.

Tips:

  • Use fresh coconut milk for the best flavor. If you don't have fresh coconut milk, you can use canned coconut milk, but make sure to use full-fat coconut milk.
  • Rinse the rice and beans thoroughly before cooking. This will help to remove any dirt or debris and will also help the rice and beans to cook more evenly.
  • Add the rice and beans to the pot of coconut milk and water, and bring to a boil. Then, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice and beans are tender.
  • Once the rice and beans are cooked, stir in the chopped onion, garlic, and green bell pepper. Cook for an additional 5-7 minutes, or until the vegetables are softened.
  • Season the rice and beans with salt, black pepper, cumin, and thyme. You can also add a pinch of cayenne pepper for a little bit of heat.
  • Serve the rice and beans immediately, or store them in the refrigerator for later use.

Conclusion:

Caribbean coconut rice and beans are a delicious and easy-to-make side dish that is perfect for any occasion. The combination of coconut milk, rice, beans, and vegetables creates a flavorful and satisfying dish that is sure to please everyone at your table. Whether you are serving it with grilled chicken, fish, or vegetables, Caribbean coconut rice and beans are a surefire hit.
